Time to start the week off right!
For breakfast I chose something new... I tried a packet of the new Quaker "Simple Harvest" vanilla, honey, almond multigrain hot cereal made with 1/2 cup nonfat soy milk.
It was very good, grainy and chewy- just how I like it!
I knew one packet wouldn't fill me, but I didn't want to go for two quite yet, plus I know I'm going to be pretty high on the grains today... so I added 1 medium banana to it ( went perfect!) with 1/2 cup greek yogurt (Fage 0%) topped with 1/4 cup fresh blueberries (yep, we found some good ones at wholefoods!) I also had a big cup of coffee with 1 1/2 splenda, the other 1/2 of the splenda I mixed in with my yogurt to take out some of the bitterness!
Nutrition
Oatmeal & Milk- ~ 200 kcal, 3 g fat
Banana- ~ 130 kcals, 1 g fat
Yogurt & blueberries- ~70 kcals, .5 g fat
Total breakfast Calories- ~400 kcal, 4.5 g fat
Now I am perfectly satisfied and fueled to hopefully get some organizing and cooking done today!
I think I'm going to start my foccacia in a bit, then tackle my pomegranate, and go for a run after lunch!
Yoga tonight! I'm very excited to get back into yoga; it's one of my favorite de-stressers and strengtheners, so it's my resolution to start getting there as much as possible... hopefully once or twice a week!

Lazy Bogger

Ok, so it’s actually 1/7/07 and I’m blogging for the weekend.
This is my “weekend wrap up” I guess!
Saturday we got up early and headed to the big city for a day full of shopping!
It was quite fun. I decided I wasn’t going to go crazy thinking about nutrition because it was my sister’s birthday trip. So I allowed myself a few treats… but I feel like I did pretty well overall.
Plus, I’m still looking for a few extra calories to get my weight back up there to my desired range.
We started the day at my favorite Bagel place, Bagelz… where I splurged, and got myself the “everything” bagel with some lo-cal veggie cream cheese. This probably wouldn’t have been too bad a choice, besides the lack of whole grain, but they put soooo much cream cheese on the bagels, I’m sure I could have wiped off a whole bunch of it and still had it be extra-cheesy!
I indulged, just this one time… hey, at least it’s “lo-cal” ;)
On the way there my stomach started growling just a bit, so I settled on a banana I brought with me to hold me over until we made it to the city.
Once in the city, we headed up 7th ave to Hale and Hearty Soups, where Ali and I both chose the combo- it’s a great choice, 1 small soup and ½ a sandwich!
I went for the “lentil chili” which was fantastic and very filling in itself, and then I tried the tomato, basil, mozzarella sandwich. It was on a GIANT crusty roll, which I tore off ½ of, because I didn’t need so much of those refined grains… but it was delicious, even minus some of the fluffy bread.
We headed off to Times Square, where Ali and I picked up cute “best friends” necklaces at the Quicksilver store, some new face products and a new perfume at Sephora (LAMB by Gwen Stefani… smells reallllly nice!)
Then we were off to 5th!
On our way up the street, we stopped at Garret’s Gourmet Popcorn.
I sampled about 1/3 cup of “the mix”… the original Chicago blend which has caramel and cheese… sooo good!
We picked up some for mom and dad to snack on, then continued shopping away!
I scored some great after-christmas deals, at Lacoste (2 shirts for the price of 1 ½!)
H&M, Henri Bendel… very fun!
On the way up the street, we did stop into the Lindt store and each sampled a peppermint truffle… yumm!
We also brought home raspberry truffles, but I’m saving mine for a true craving!
We headed over to Madison, where we browsed some designer windows, and grabbed drinks at Smiley’s (I had a blueberry raspberry Fuze, Ali chose a lemonade) before heading to Europa Café for an early dinner.
We both chose big salads for our meals; mine was a delicious mix of mixed greens, tomatoes, onions, broccoli, asparagus, sesame tofu, peppers and walnuts. I left a few walnuts in the bottom of the both- he gave me a generous few ounces! I like the extra healthy fat and protein, but so much is so much! The salad was filling for a while, held me over through our chilly trek from 54th to 32nd street… All the way down Madison!
We crossed at 32nd street, and went straight to Little Korea for my favorite Frozen Yogurt in NYC… Pinkberry! No fat, low in calories, DELICIOUS fruit, and a whole lotta froyo for under $6!
I had the medium orginal with strawberries, mango and chocolate chips… I finished all of it, leaving a few chocolate chips at the bottom.
I also had a bite of Ali’s with kiwi and capn crunch =)
This kept me good on the train, where I grabbed a diet Sierra Mist, and then at home I snacked on about 1 ½ cups Garrett’s Popcorn with the parents before getting some rest!

I woke up on Sunday morning ready to get back on the healthy bandwagon!
Although, I feel I might have been equally as healthy/indulgent yesterday as I was on Saturday! Hmm.
I started off the day with 1 cup 1% cottage cheese with ¼ cup blackberries (all we had left in the house), a medium banana, and ½ wheat english muffin with 1 tsp margarine.
I ran in the morning, and we headed to wholefoods for lunch.
I chose to make ½ my bowl a mixed salad with some tomatoes, cucumber, peppers and shredded carrots over mixed greens with balsamic vinegar.
Then, I chose a few of their prepared salads to give my salad some protein, fiber, fat and bulk!
I had a couple pieces of tempeh, a couple pieces of ed’s tofu, a bit of the seitan which had some peppers and olives in it, chickpea salad with roasted garlic, morroccan lentil salad, and sweet edamame succotash with corn.
Yummy and filling!
We shopped for the week and the party, I am very excited to make some yummy new recipes this week!
My plan:
Monday- during the day, I’m planning on making some whole wheat foccacia, and splitting open a pomegranate for my salad!
Dinner is spaghetti squash with homemade ratatouille, (while watching the movie!) and I’m going to take a whack at some rice pudding after Yoga =)
Tuesday- Eggs and veggies for breakfast, lunch out with mom (maybe Middle Eastern? I love hummus!) dinner is going to be salmon burgers on foccacia with dill sauce, avocado, tomato and provolone with sweet potato fries!
Then I’m going out with Evie… should be a good time ;)
Wednesday- Something during the day, hopefully. Dinner at night will be at work, as usual.
Thursday- More eggs for breakfast (overdue for some omelettes!), lunch at the mall and shrimp scampi for dinner!
Friday- Big smoothie with new fruit for breakfast, maybe lunch out? And dinner is corndogs and chili =)
Yumm!
Now for last night… I picked up a very delicious looking mushroom-spinach lasagna at WholeFoods… it had 2 servings in it, 310 calories and 13 grams of fat each. That is a bit high on the fat, but I had ½ with some baby carrots (about 20 or so!) and it was soooo yummy, sooo filling- even after I picked off a bit of the cheese to reduced some of the saturated fat!
Good work dinner.
After work I had about 16 cherries and some tea before bed. This was good and healthy, but it took me a while to get to sleep… I hope it wasn’t my stomach digesting, but I feel I was just uncomfortable in general =( Oh, well. I’ll get some sleep tonight!

Fresh Start
Early Start

Got up at 7 this morning for a bit of an early start; I’m picking Danielle up a little later (10:45) to go out to lunch and do a couple things… maybe a trip to the tattoo parlor perhaps? Very exciting!
Whatever we end up doing, I’m sure we’ll be out most of the day so I’m running and doing a bit of strength, if I feel up to it- in the morning before we go off.
Breakfast
Big breakfast to hold me until we get a chance for lunch! I had another large smoothie made with ½ cup nonfat vanilla yogurt (50 kcals), 1 scoop protein powder (40 kcals, 2 g fat), ½ cup each frozen mango/blueberries (100 kcals, 2 g fat), I large banana (130 kcals 1 g fat) and 4 small strawberries (25 kcal) which changed the taste just enough! Yumm… all for around 355 kcals, 5 g fat
On the side I had ½ whole wheat English muffin (I love this kind!) with 1 tsp I can’t believe it’s not butter… altogether 90 kcals, 3 g fat.
Total breakfast ~ 445 kcals, 8 g fat
Hopefully for lunch we’ll go to my favorite middle eastern place so I can get my fave healthy falafel wrap… mmm I’m craving one NOW even though I’m totally full!
Off to plan the week’s menu…
Planned the menu, but spent far far too long trying to figure out dinner for Saturday!
Ended up getting a good run in, but skipping the strength today =(
Oh, well I guess I’ll have to get back on the strength bandwagon on Sunday!
Lunch
I met up with Miss Tira May for lunch today…
It was lovely; we went to El Fuego… my fave little Mexican place in Point Judith, and I had the veggie burrito which has grilled vegetables, rice, beans and cheese. It comes with sour cream but I had it on the side; only about a tablespoon.
It was big and I finished it of course, but it was pretty healthy and it held me until my snack!
I also nibbled on one tortilla chip with a scoop of yummy homemade salsa. Delish!
After we talked for almost 2 hours, we headed to the PIERCING PARLOR… where I FINALLY got my nose pierced!!! Ahh I love it, I’m so excited!
When I came home I snacked on a small handful of nuts and a Clementine. I can tell it’s not going to hold me long, but I’ll get a hot tea from Starbucks before work and a soda to hold me until my semi-late dinner.
I packed a vegan grillers burger, some mediteranean veggies & broccoli. (Altogether 210 kcals, 5 g fat)
I think when I come home I’ll have some yummy cherries my mom brought home and maybe even some peppermint vitasoy!
Mmm… off to work!

Banana Pancakes (Ali's 14th birthday)
Ok, well OATMEAL banana pancakes!
I made my mom and sister cinnamon brown sugar whole wheat pancakes with strawberries this morning for my sister’s 14th birthday (omigosh I can NOT believe she’s already 14!!)

I’m not really one for the spongy taste of regular pancakes, but while I was cooking them I whipped together Kath’s recipe for the 1/3 cup portions of oatmeal pancakes. I used egg whites, oats, cinnamon, vanilla, and 1/3 of a mashed banana. I topped it with the rest of the mashed banana, 1/8 cup walnuts and a drizzle of sugar free syrup.
mmm, thank you Kath they were FANTASTIC!

I also had to take the opportunity to have some of the gorgeous strawberries my mom found… a score around here this time of the year! I had ½ cup of slices, about 6 or 7 medium.
Altogether this came to:
Pancake- 150 kcals
Banana- 130 kcals
Strawberries- 60 kcals
Syrup- 15 kcals
Walnuts- 100 kcals
~ 455 kcals, 13 g fat
Yummm!
Lets see how long it holds me…
It held me very well, 3.5 hours well!
I just ate lunch at about 11:45…

I feel like one of those guys on the taco bell commercial- except healthier =)
I knew tonight was going to be full of fat (some healthy, some not) and rice… so I went with something simple and healthy for lunch.
While I was preparing my big salad, I snacked on 10 large baby carrots (about 40 kcals)
I made a salad with ½ cup kidney beans (100 kcals, 1 g fat), some mixed greens, tomatoes, cucumber, scallions and red pepper for about 120 kcals.
I added 1 tbsp Annie’s Low Fat Raspberry Viniagrette, which added just enough flavor for only 20 more calories and 1 gram fat.
I also had 1 cup 1% cottage cheese for 180 kcals, 2 g fat.
Total lunch calories ~ 460, 4 g fat
I’m going to call Danielle and make plans for tomorrow now, then go for a run and hopefully start making Ali’s cake before she gets home! Busy day, again! =)

Didn’t get as much done as planned today… but did end up making a cake!
And a quite yummy one, if I do say so myself =)
I snacked on a large apple in the afternoon, and I baked a confetti cake with buttercream frosting, raspberry filling and candy kisses for Ali!



We had dinner at Shogun- appetizer and sushi galore!
I ate a good amount, but tried to keep portions reasonable.
I had 2 small shrimp dumplings with a bit of sauce; some seaweed salad (about 1/3 a cup) and about 7 pods of edamame.
Afterwards we had SUSHI! Yummm…
I had 1 piece California roll, 1 piece spicy scallop, 1 piece Philadelphia roll, 2 pieces of the special falcon roll (yellowtail, tuna and tobiko) as well as ½ a cooked ebi nigiri.
Mmm mmm! There was a lot of white rice, but the oils in the seaweed salad are pretty healthy, the fish is great and the veggies (I ate a few extra cucumber slices!) and avocado were very nutritious.
Of course, afterwards we went to my grandparents’ house and shared my wonderful creation with them; I had a big slice of cake with 5 candy kisses on it! I also had about ½ cup (1 serving) light half-baked ben and jerrys frozen yogurt. Delish! Yes, a big treat. But tomorrow’s a non-treat day for me!

I am going to lunch with Danielle, I’m meeting up with her in the morning, and we’re going to do lunch (maybe Pick Pockets or Markos!) and hopefully a trip to Ethnic Concepts for a nose piercing or a new tattoo, perhaps? We’ll see!

Well, I finished my lemon-ginger tea, I think I’m going to sip some tonic and be off to bed pretty soon… early morning tomorrow!

New Year, New Start.
Ahh, 2008. It’s finally here!
I think for the first time in many years, I feel ready for the new year to come about.
I accomplished SO much last year, and there is SO much more I want to accomplish this year!
My goals for today:
-Get together someone's birthday present...
-RUN 35 minutes (working up to 40!)
-Planning out the rest of the week
-Writing/printing my resolutions
-Getting my bureau organized
-Making a list of to buy/to do
-2 things on to-do list!
-Cooking a healthy New Years dinner =)
FOOD
Breakfast
Number one goal for 2008? Variety, Balance, Moderation.
I started the day well, with one of my favorite healthy, filling breakfasts:
5.5 oz of Greek Yogurt (1 Fage 0%)
½ cup blackberries and 1 medium kiwi
¼ cup sliced almonds
1 tsp natural honey
1 cup coffee
2 waters & all vitamins
Breakfast= ~460 kcals, 17g fat (healthy of course!)
Lunch
Breakfast held me over, better than expected.
For lunch I had a yummy balanced meal of 1 cup butternut squash soup (90 kcals, 2 g fat), a salad with ½ cup black beans (100 kcal 1 g fat), mixed greens and some chopped cucumber, tomato and pepper- not too much tomato because tonight’s dinner is FULL of tomatoes! (about 100 kcal 0g fat) plus 10 kashi crackers on the side (about 100 kcal, 3 g fat)
Tasty and filling, I hope! Overall my lunch came to ~400 kcals, 6g fat. Not too bad.
I’ve been getting SOME cleaning done… I’m going to do a bit more work, then run around 2 (just a treadmill run today) and possibly have a snack around 3:30… I’ll start dinner at about 5.
I can’t wait… I’m making fish with burst grape tomatoes, and chive gnocchi! Ali’s making us some cheesy garlic bread to go along with it, and I’m sautéing some fresh zucchini to round out the meal. Yum!

Pan broiled Tialpia with burst tomato shallot sauce, herbed sauteed zucchini, chive butter gnocci, and cheesy wheat garlic bread:

Nibbling
So I sure did some "nibbling" the past couple of weeks.
It was the Christmas Season, and as it's coming to a close I'm gradually starting to get back on track with my nutrition major-esque healthy eating habits.
It was good while it lasted, but it did start to get a bit out of control and I don't like feeling out of control.
I've been exercising all throughout the season, making sure I have the time to get in a little cardio or strength every day, with only a few exceptions. I'm trying to keep up my running so I can get right back into doing races in the spring...
I got my grades in at school; straight A's so far so it looks like I'll be going to Italy the end of June and most of July.
This will definately affect both my eating and exercise, but I'm sure I'll learn to adapt.
That's one of my strong points, I feel. Learning to adapt to new situations, trying to accept change as it comes and roll with it. I was discussing this with my mom the other day; how I'm better now but it wasn't always as easy for me to deal with change.
I think it was my "big change" into eating healthier, exercising more regularly, and becoming overall more fit and healthy, that really made me realize how good change can be... and that sometimes it's needed more than we even know.
So I'm ready for a change.
I'll put up my "holiday splurges" blog soon, and that will be the end of it.
New year, even newer Kristin.
I plan on making the change back to the healthy Kristin I was before this holiday season, and hopefully even better.
I LOVE the way I feel when I eat right, go for good long runs, get enough water, enough sleep.
So thats my goal for 2008. Keep up the progress I've made, not let little slipups get me down.
I'm ready to start anew!

I'm currently in Greenville at my friend's lovely house and I have work later...
[Breakfast this morning was an eggwhite omelette with a bit of full-fat cheese (not so good) some heart-healthy fat filled avocado (very good) and salsa with a clementine on the side. Mexieggs!]
Then tomorrow I'll be in New York with my Mom and Sister...
(More splurging of course, lets see if I can keep it somewhat contained!)
Hopefully by next week we'll do a big house cleanout of Christmas Treats etc and start with some healthy eats for the new year! I've got a GREAT new Skinny Bitch in the Kitch recipe book and I am DYING to try the new recipes!
I'll post pictures and opinions when I try anything new! =)
Time to relax for now...
