Dessert treats and a breakfast classic

Last night my friend and I couldn't find a good place to watch the game, so we ended up just going to a nearby "dessert bar", having treats and hanging out which was just as fun! Nothing at this place was nearly healthy, or nearly vegan... but I indulged for one night and I guess I just won't go there again! It was still quite yummy though. I had a vanilla ice cream mixed with strawberries and teddy grahams (fun concoction, right?)

When I got home late again, I was strangely hungry so I snacked on a few pieces of dried fruit just to settle my stomach. This morning I woke up craving oats, but we were all out (Kristin baked again!) so I settled on two flaxplus waffles with 2 Tbsp PB, some maple syrup and a banana for a wafflewich. I had the last few HUGE grapes on the side. These were sooo good I'll be needing to get some more!

Today I have work a little later, so I'm planning on exercising at some point, and trying a new tester recipe for lunch, so I'll have something to do!

Dinner by Ali and Rachael Ray

This afternoon, I felt like baking, so I made a batch of my favorite "Supercharge Me" cookies by ED&BV. I made them with almond butter this time, and I definately loved them best this way!

While they were cooling, I went for a 30 minute run, 20 min walk on the treadmill. After showering, I was soooo craving some cookies, so I had two of my "healthy cookies" (I made them small) and a small bowl of grapes to hold me over.
I went shopping for my Dad's present, which was very successful, I got him a new book and some nice earbuds for running- just what he wanted! Plus, I'm making him a whole big feast =)
(It's a good thing he doesn't read this or I'd be ruining the surprise!!)

The minute I got home, the first thing I noticed was the incredibly delicious aroma wafting from the kitchen. My stomach immediately started grumbling- luckily dinner was ready! Alison made me a fantastic dinner- "Thats Shallotta Flavor Spaghetti", recipe by Rachael Ray. She even used my favorite whole wheat spaghetti and vegan parm because she knows I'm avoiding dairy. On the side, she also boiled one of my fave green veggies- zucchini! The zucchini was so darn good I just had to go back for a second big helping (about the same size as pictured). It was great, and I'm so thankful I have such a great lil sis to make me yummy meals every once in a while.

Now I'm just waiting for my friend to get home, so we can head out and go watch a hockey game later. I love hockey, but to be honest I'm not even sure who's playing! Should be fun anyways =)

Orange trio

Today's lunch was sooo fab, definately put a smile on my dreary day! I made myself an easy but super satisfying lunch of one of my favorite veggie burgers- Amy's California, topped with FYH cheddar, ketchup, and mustard all between an Ezekiel english muffin. YUM! Such a great combo. On the side I had some carrots and a nectarine (this one was SO darn juicy!). When I took the photo, I noticed everything had a bit of orange on it, so the photo was quite the beta carotene promo-gotta love bright colored foods =)

My day has been getting better, I've been planning out my Dad's bday dinner- he wants Chili and Cornbread with a big salad and I'm surprising him with dessert- what he doesn't know is that the ENTIRE menu is going to be vegan... even the ice cream cake! I'm super excited, I can't wait until Monday!

Return of the favorite Granola

So I did get to bed late again last night, but I was up early this morning, craving a crunchy breakfast! The other day, my mom picked us up some Nature's Path PB granola, my favorite! I was super excited she bought it, because I haven't had it in so long.
This morning I had 1 cup of granola on top of a container of vanilla Silk soy yogurt with about 3/4 cup blueberries. Hit the spot!

Today is a gross, rainy day... not making my somber mood any better... but I plan on a nice, relaxing day to up my spirits, Some reading, a treadmill run, I'll be venturing into town to get my dad a birthday present (his birthday is on Monday) and then my sister is making me dinner later tonight, so I'm excited to see what she makes me! (It's a surprise!!) Like I said, I'm not in the best mood... but I'll try and make the best of my day anyways!

Flavorful Improvement

Today I went on my usual 4-mile run as planned, then packed up my bags and headed to work. At work, I snacked on a Cherry Pie larabar to hold me until dinner a couple hours later.

The first half of work went by fairly quickly, and soon enough it was time for my break. I brought delicious leftovers from lastnight- more Chana Palak Masala by the Happy Herbivore, which- as I suspected was even more fantastic than last night! The flavors were even more intense and delicious, it was a very satisfying meal. On the side I also had 1/2 a sliced bell pepper and 2 mini pita pockes, which I ate 1.5 of because the Chana filled me so well!

The second half of work was slower than the first, but it still wasn't bad overall. I got home on time, and for a dessert I heated 1/2 of one of my favorite ABC Vegan Espresso Chip cookies, with some yummy fresh cherries. Hit the spot!

I'm off to see a friend for a little bit, hopefully I don't get home too late because I'm pretty tired!

Stuffed Sammie

I decided on an early lunch this morning, in favor of relaxing in the morning and running right before work so I don't have too much boring "waiting time" before I have to leave. I made myself a big deli-esque sammie with 2 slice of tofurky, 2 slices of lightlife "ham", dijon mustard, avocado, spring greens and a few slices cucumber on sprouted grain bread. It was huge and a bit hard to eat, but very tasty! I also had my usual veggie/fruit side- carrots and an organic pink lady apple. Filled me well, should fuel my run in a bit before work!

Second is the best, and a favorite breakfast

Well, just as I had expected seeing the movie again was even better than seeing it once! I snacked on a Key Lime soy yogurt before we left to hold me over.

I had a great time with my friends, I'm glad I went even though we got home super late. I was hungry when we got home and didn't want to go to sleep on a growling tummy, so I just opted for a few pieces of dried fruit to settle my stomach before bed.

This morning I woke up rested despite my late night- I had one of my favorite breakfasts again, my classic "wafflewich" with 2 flaxplus waffles, 2 tbsp PB, a drizzle of maple syrup and a thick banana with some grapes on the side. Delicious and filling as always!


Today is a very uninteresting day... I'll just be running and eating lunch before jetting off to work all this afternoon and evening, and then crashing from exhausation as I usually do after long work nights... Tomorrow I'm excited about- I'm going shopping for my Dad's birthday present and then my sister is making me dinner!! Should be quite fun =)
