Food-filled morning

I had a great time shopping this morning! My mom and I headed to the farmer's market in town to pick up a little fresh produce. We found some spinach, salad turnips for a change in salads, and some GORGEOUS organic strawberries! Yum! We also stopped by the Co-op booth, where they were selling some yummy home made treats; I snagged a sample of "Dan's Yummy Bars", and had to buy 2 for snacks! They're made with wheat germ, coconut, flax, walnuts, and seeds, they look so healthy and they really are yummy too!

The smell of fresh strawberries is one of my alltime favorite scents!

Afterwards, we headed to the real co-op to get some more veggies, bulk oats, tempeh bacon, a couple supplies for recipes and my dad's cake on Monday. I also snagged two 1/2 wraps to have for lunch. (They're pretty small) I got the tempeh chili, which had garden tempeh, beans, spices, brown rice, peppers and lettuce. Yum!


I ate these on the way home, and when I got back I had a big apricot and a few of our new fresh strawberries to finish my lunch! Tasty and filling!

It is sooo warm here; I'm very tired so I'm thinking that a walk looks pretty darn good- I might do that instead of a run today, to take it easy before the race tomorrow.

Late night, early morning

Last night by the time my friends went home, it was so late I was far too tired to do anything but sleep... so I decided to hold off on my blogging until the morning! I had a great time though, I got to see both of my best friends in one night which is pretty rare, a nice treat!

We got takeout at 7 moons, and it was delicious of course! For my dinner I had another 1/2 of the 2 Nime Chow with some more peanut sauce (no picture, but like the first one pictured), as well as an avocado sushi roll and seaweed salad. My friend teased me about eating a garden, but I thought it was absolutely delicious and filling- I told him I happen to love my vegan meals!

Later on, I got persuaded into going up the street for home made ice cream... (it's so hard to pass up in the summer) so I got a small, which is actually quite large, black raspberry chip frozen yogurt. A delicious dessert, and slightly healthier than ice cream. I know I'm going for gelato with my sister tonight as well, so I'm probably going to have a vegan sorbetto- I don't like to have dairy very often. This was a very good one though!

After watching a movie, we started getting a little hungry before the second movie we were going to watch, so I introduced my friend Danielle to some of my favorite healthy snacks- dried mango and kiwi, and veggie chips! I had about 3 of each while watching the movie.

It was a great night, and I loved seeing my lovely friends- so I woke up very happy and energetic this morning!
I had originally planned on making pancakes for a group, but both my friends left late because they had to get up early, so it was just me for breakfast. Of course I was craving pancakes though! So I set out to make Erica's Banana Chocolate Chip Pancakes. I followed the recipe, except using nonfat soy and carob chips, with a BIG banana... let me say, WOW! Def. the best vegan pancakes I've ever tasted!
I made 3, and although they look funny (I have a really bad pan for pancakes), they were delectable and perfect. I crumbled some walnut halves over the top and had some cherries along with them... and I am STUFFED!


The best saturday morning breakfast- it would only be better if my friends were here, but I'll see both of them again soon!
Today I'm planning on an easier exercise day, I took it a little easy yesterday, but today I think I might just go on a long walk, we'll see. I have a short race tomorrow (my last before I leave!) and I plan on running all week, so I don't think one day off will be a problem!
I'm going to the Farmer's market in the morning (super excited!) then to grab groceries and lunch at the Alternative Food Co-op (my fave health food store in town!), exercise and make my mom and sister a new tester recipe for dinner I'm excited about! And then my sister and I are going for shopping and gelato in Newport later this evening. Such a busy busy day, but I am SO excited!! It should be a lot of fun.

Sneak peak...

I just picked up takeout, and I was so hungry waiting for my friend Eric to get out of hockey I decided to have one of my favorite appetizers: Vegetarian Nime Chow, with a little sweet peanut sauce

Quick post, out the door!

I'll do a quick lunch post, but you'll have to wait until later for pics- I only have a few minutes!
This morning I was feeling quite tired, probably because of the dreary day, so I didn't feel much like exercising. I still decided to do a bit, so I ran for 20 minutes, walked 15 and did about 10 minutes of strength training afterwards (a few abs, some pushups, lunges and arm exercises)
After I showered, I threw together an easy filling lunch- a tofurky sammie with 4 slices hickory smoked tofurky, some dijon mustard, a slice of FYH vegan monterey jack, cucumbers, greens and a slice of tomato all on 2 pieces of sprouted grain bread. It was messy, but tasty and filling! I also ate some carrots as always, and grabbed a pear I'll be eating on the way.


For a snack later I packed a peanut butter Clif Z-bar and an organic pink lady apple.

Odd hours

I'm working odd hours again today, so trying to feed myself well is a bit of a challenge. I had a big breakfast to fuel my early run, which, unfortunately is inside again because of all this wet, wet weather! It needs to stop raining, I miss the sun!
This morning I poured myself a HUGE bowl of Nature's Path Optimum power cereal- I was going for 1.5 cups but poured 2 cups and then 1 cup hemp milk without thinking, and realized how much cereal it was! It was yummy though, and the extra calories are good for me. I also had 3/4 cup of blueberries in the cereal, a nice sweet n' crunchy bowl.

Like I mentioned, it's an early workout for me this morning, then a quick lunch and I'm off to work for a few hours before I meet up with my friend. We were planning on going for a hike, but it looks like with this weather that's not likely. So, we'll probably just hang out, order takeout... I'll try to blog when I can!

I'll try and be back for lunch, depending on how on track I am this morning!

Flew by

Wow, this week has just flown by. I can't believe tomorrow is already Friday! Its amazing in exactly 3 weeks I'll be in Italy. (Hopefully blogging, we'll see!) Tonight at work flew by just as fast.

I ran on the treadmill this afternoon to avoid possible showers, and just did my usual 30 run/20 walk routine. When I got to work, I was hungry so I snacked on a Macadamia Apricot KIND bar I had packed, which held me well until dinner.

For dinner, I heated up the last of my Chana Palak Masala leftovers, and yep- they were even better the third time aroud, sooo much flavor! I had my serving over a bed of whole wheat couscous and it was absolutely delectable.

I did come home craving sweets again, so I had two of my ED&BV Supercharge me cookies, with some cherries. I love this sweet treat- healthy AND yummy!

Sorry for another quick late night post, but I am exhausted from staying up these last couple of days, and I have a long day planned tomorrow- Running in the morning, working mid afternoon, meeting up with a friend for a walk, and then some dinner, and then a possible movie night. I'll be going, going!

Testing more BBQ

Today for lunch I whipped up another tester recipe by Lindsay the Happy Herbivore! It was a delicious BBQ Sammie, which I topped with some FYH Vegan Monterey Jack cheese, a big piece of kale and thick slice of tomato all on my favorite Ezekiel Sprouted grain bun. I had some carrots and a nectarine (can't get enough!) on the side as usual, but the sandwich itself was sooo filling I probably could have eaten just that and been satisfied! Another quick, yummy recipe to add to my staple meals.


I'm still being lazy, as I have been lately in the mornings, but I have to run and get ready for work pretty soon so I'll be blogging again later tonight!
