Unexpected rush

Guess what? When I signed on to blogger today it said I had posted 500 posts! So happy post #501! Hehe, just thought that was cool =)

Today I am unexpectedly rushed, because I woke up to a text that my friend has to pick me up 2 hours earlier than planned. TWO HOURS?!?! Woah! I have so much to do, so little time! I wanted to eat, lay around, then run, get my dad's cake ready, and head out... looks like I'll be putting my Dad's cake together then heading out for a quick run in less than an hour.

Luckily, I put my breakfast together last night- I made a delicious bowl of Vegan Swiss Oats, with 1/2 c oats, 1/2 c vanilla soy, walnuts, cinnamon and cranberries last night... in one of the new bowls I won!

This morning, I added a banana and some plain soy yogurt to my mix, and had a small bowl of the rest of the strawberries from the farmer's market. This is, by far, the most filing breakfast I make. I'm glad, it will need to hold me a few hours before we end up in Providence to visit my Dad for his birthday.


Ok, I'm off to build an ice cream cake! I'll be back after lunch!

Movie snacks

Eric and I couldn't decide on what movie to see, so we just headed back to my house to watch a couple movies we had here. Still had fun! We ate some 100 cal packs of kettle corn and shared a big bowl of grapes for a snack! Sweet, salty and crunchy- the perfect movie snack!


I'm headed to bed, I'm wiped from such a busy day- but it was a good one! Tomorrow's sure to be jam packed as well, it's my Dad's birthday so I've got a lot planned!!

Decadent Dinner for One

You'd think after being out in the sun all day...

One would have had enough of the heat and want to stay as far away from the kitchen as possible. Not I!

This afternoon, I made the first half of my dad's ice cream cake- look how yummy it looks so far!

(Yes, I did a good bit of cookie-nibbling while making this!)

Then, I decided to sun outside on my lawn, while studying a bit of Italian and reading a Nicholas Sparks novel (I'm usually not much of a mushy-romantic fan, but I just love his books!).
I snacked on an apple and some graham sticks, and sipped on some iced green tea while I layed out.

Once I had enough of the sun, I went right back into the kitchen, where I spent my evening cooking up a huge, delicious decadent dinner- for myself! I had so much time on my hands, I decided to make three things I had been wanting to try- two new ED&BV recipes, and I used Happy Herbivore's idea for Oven-Grilled Veggies.
I made Dreena's Coconut Lime Basmati Rice, which was sooo good- ohmigosh, I'm addicted! I decided to make the full recipe (4 servings) and leave some for the fam:

I also made Orange Sesame Tofu, which was equally as incredible! Sooo much flavor, I love love loved it! Definately making this one again. I poured some of the marinade on top after it baked and topped it with green onion and sesame seeds. Can you say yum??

For my veggie, my Mom had mentioned earlier she wanted summer squash, so I decided to "grill" them in the oven, and they came out awesome as well! Three thumbs up for all the amazing recipes I made tonight. This was one of the tastiest meals I've had in a while! (Aside from last night! Gosh I love cooking!)

Ok, I've got to go get ready now- my friend invited me out for a movie, and I'm kinda gross from being in the sun all day, have a nice Sunday night!

Racing for a cause

The race today was the best all season. It was hot and humid, and incredibly horrible running conditions. However, I pushed through it- and ended up beating my time from last year, finishing in 21:24 and holding my title in 2nd place in my age category. Today was a really special race, I did it for Katie and her family; and I felt really good I did so well!
After the race, I had a big orange- and as I was chowing on my orange, the woman who just passed me in the race came up to me and congratualted me on my success- and asked if I was in college. When I told her I was a sophomore at URI she told me she was the running coach there, and told me I should consider joining the team! How exciting?!? I just might think about it!

On top of getting a new purple sweatshirt for my award, we won a raffle and got some cute new bowls and spoons my mom said I could use at my new house! I love housewares =) While hanging out with my Mom, cousins (who volunteered), uncle (he walked it), and Kahlua- who came along for the ride, I had a small 1/2 cup serving of Ben and Jerry's ice cream they had... I know it's dairy, but on such a hot day I couldn't pass it up!

After the race we stopped by the store for a couple quick groceries, my mom told me she was craving summer squash so I told her I would make her some with dinner this evening! When we finally arrived home, I was very ready for lunch- so I just heated up a big bowl of last night's leftovers (Vegan Broccoli Mac and Cheese by Lindsay), and had a nectarine on the side. Filled me up well- I was starving after such an intense run!

This afternoon I'm planning on reading some more of my book and relaxing out in the warm sun, plus preparing part 1 of my Dad's ice cream cake for tomorrow! I can't wait! I'll be back later...

Ready to Race

I have my last race before I leave today; I was going to do another next week but got scheduled to work- so I guess this is it! I always try and make this a good one, because it's a race very close to my heart- it's a 5k for the Katie Decubellis Memorial Foundation, a foundation against drunk driving. The founders live in my town, I graduated with their son, I was in 5th grade when their daughter Katie was tragically killed. I never miss this race, I feel it's such an important cause to support. Hopefully I'll race well!

To fuel my race I had my usual pre-race mini meal; a whole wheat mini bagel wth 1 tbsp PB and some raspberry preserves. Perfect light breakfast to fuel my run!

Newport treat

I had another lovely night over in Newport with my sister. We shopped a little, I got a pretty new gold necklace, had our portraits done, and we went to gelato as planned- I had two of the best flavors I've tried- Blood Orange and Blueberry Lavender Sorbetto! We asked for smalls but they gave us big portions! It was a great evening, warm with just a slight breeze- perfect to walk around with a bowl of gelato, chatting and enjoying the beautiful city.

I'm off to hit the hay early, I've got the most important race I run at 9:30 tomorrow, can't be late!

Hot Hot Heat

Whew! Definately a scorcher out there. I spent the afternoon lounging around outside with a book and my ipod because it was so darn nice, but far too humid to run. So, I took my exercise inside for a 45 minute inclined walk, and then snacked on one of Dan's Yummy Bars I bought today at the farmer's market.

I made and ate dinner early tonight because my Mom has to leave for work- my sister and I are meeting her over there to shop for a bit! I made another one of Lindsay, the Happy Herbivore (and cookbook writer!)'s tester recipes- Vegan Broccoli Mac n Cheese. YUM YUM YUM! I am such a big mac and cheese fan, so when I find a vegan recipe I love, I get so excited! The flavors in this were delicious, and the broccoli made it all the better. I had a big bowl, and devoured every creamy bite.
