Never too early for tofu!

I decided on an early lunch this morning, so I can exercise in the early afternoon and snack before I go out with my mom later this afternoon. I made another new VWAV recipe- dill tofu salad, which was fantastic! I followed the recipe almost exactly, except I used canola mayo instead of the veganaise the recipe called for. Turned out great, and I had a big scoop on top of a bed of mixed greens, along with some carrots and a big piece of my garlic basil foccacia. It filled me well, and will hopefully fuel my workout just as well!


edited to add: I also had a small handful of green grapes; I wasn't hungry but I was craving something sweet!

Granola girl

I got home super late last night... the movie was great, and then I hung out with my friends for a while. Admittedly I did a bit of late-night snacking...not my usual habit, of course, but I felt a bit guilty anyways. Back to healthy today for SURE! (Seems like I've been saying that every day the last week...)

This morning, I woke up pretty rested for only getting a minimal amount of sleep. Which is good, I think- but I still may wait until after lunch to work out.
When I woke up I was dying to dig into some of my fresh box of flax plus granola- I had 3/4 of a cup over a 6oz cup plain nonfat yogurt, and 3/4 cup fresh blueberries (now I'm all out!). It was exactly what I wanted!

No big plans for today... it doesn't look like I'll be working much at my old job, so I'm on the lookout for something new.
The one thing I DO have to work on, is the plan for Tuesday- my mom teaches childrens' classes a couple days of the week at our local guild, and she enlisted my help to do some healthy cooking classes, International theme! We're starting the 4-class series with an All-American Recipe, then doing an Italian one, a Mexican one, and a Middle Eastern one. Should be fun! So that's what my plan for the day will be!

A favorite sweet treat

Soo today at the store I had an exciting discovery... two of my italian favorites in one- gelato and blood oranges!

Actually, it was Ciao Bella sorbetto and I had a delicious 1/2 cup of it for my late night treat tonight, while waiting for my friend to get out of work!

I also had a bite of cookie dough purely decadent... i couldn't help myself!!

Off to the movies, buona notte!

Home alone

Tonight I'm home alone for dinner tonight; I did a big grocery shop this afternoon, just some fresh produce, granola, low fat cottage cheese, and a few other items for meals this week. When I got home from the store with my mom, we had a little treat I found at the store- figs! I enjoyed mine fully, not as good as Italy, but definately brought back the sweet memories of figs right off the tree!

A while later, my stomach was growling for a snack, so I had a 1/2 cup cottage cheese and a medium plum. Usually this combo satisfies me perfectly, but for some reason I was still hungry, so I had a small handful of mixed nuts to hold me until dinner.


Worked like a charm! I was fine for a couple hours until I had time to prepare myself an easy comfort meal. I was home by myself for dinner tonight, and although I spent plenty of time planning for meals for the whole family this week, I failed to remember myself tonight! So, in an attempt to steer away from cereal or pb&j for dinner, I made myself a delicious comforting egg meal of two poached eggs on toast with some salt and pepper, steamed broccoli, some leftover squash/zucchini with oregano, and a few olives (just because I was craving them!)


Overall it was delicious and perfectly filling, just what I needed for a quiet night in. My plans for now are to watch a bit of the Food Network, or maybe dig into one of my new books I got for my birthday before I head out with friends later on. Have a great Saturday night all!

Back to Italia

This morning I was craving fresh bread... so I made some!
I used Jenna's recipe for whole wheat focaccia- and it came out perfect! I mixed and kneaded the dough, then I went for a 25 minute hill-run as I was waiting for the dough to rise. When I returned I covered the dough with garlc infused olive oil, and topped it with some fresh chopped basil from my garden before popping it into the oven!
15 minutes later... ecco-la, foccacia!

While the focaccia was baking, I made myself my favorite italian salad- Insalatona, with greens, raddiccio, corn, tomatoes, 1/2 a can of tuna, a few balls of fresh mozarella, drizzled with olive oil, balsamic vinegar, salt and pepper. Delizioso!

I had my salad, along with a big piece of fresh garlic basil foccacia hot out of the oven! I couldn't have asked for a better italian inspired lunch!

Right now I'm about to do a bit of strength training, before I head out with my Mom to do some grocery shopping for the week. Exercise, baking, shopping, and some time with friends later... the best kind of saturday I could ask for!

Pretty Porridge

I made a delicious bowl of porridge today; a mix of 1/4 cup oatmeal and 1/4 cup oat bran.
I cooked this in 1/2 soy milk, 1/2 water, added some vanilla, a banana, and topped it with a big handful wild blueberries, a small handful chopped walnuts and a big drizzle of agave nectar!

It was a delicious, filling bowl- I've never tried this combo before, and it was a great, creamy change!
Today my plans are some exercise and errands in the morning; my legs are still quite sore so I'll see how I am for a run...
and then I need to go into work and see when they have me scheduled, as well as a quick grocery trip for some food for the week!

I'm not sure what my plans are this evening, I think I might have to make something on the go so I have no complicated dinners planned... I still haven't decided what to make... any suggestions?

Always room for...

frozen yogurt!

As my mom and sister were eating bowls of ice cream this evening, I got a big craving for something sweet... so I called up my friend Eric, and we met up at Brickley's up the street for home made frozen yogurt! I had my new favorite; a smallmocha chip. It definately hit the spot! I always need my little treats =)
