Greens galore

I just had one of my favorite quick, delicious, veggie filled meals!
I walked for 40 minutes at a pretty quick pace, and then got so hungry I decided I better stop for dinner. I heated myself up a garden herb Sunshine burger on an Ezekiel english muffin (I LOVE ezekiel products; my fridge and freezer are full of them! Right now I have tortillas, english muffins, hotdog buns and bread!!) with some FYH vegan cheddar, some organic mustard and honey dijon dressing. Yum!

On the side I made myself a GIANT salad- I started with spring greens and topped them with a bunch of my favorite veggies- baby tomatoes, cucumber, mushrooms and bell pepper. I topped this with about 1.5 tbsp Annie's Woodstock dressing, another favorite!
Overall, this meal was SO incredibly delicious and satisfying, and so healthy as well! I love easy dinners that just turn out great =)

I'm off to get ready to go off to the movies, see you all tomorrow! Oh, and I'm bringing a small package of my favorite dark chocolate sandwich cookies for a mid-movie snack =)

Morning madness

I apologize in advance for the lack of pictures... I was in such a rush to get to work this morning I forgot to bring my camera! Lunch wasn't anything out of the ordinary, though- I just had another Health Valley Three Bean vegetarian chili with some spicy blue corn tortilla chips and a baggie of carrots. It was a long day at work, especially since I was so tired, but my friend surprised me afterwards, and we went to Starbucks for a while- I had an apple and a soy latte for a snack.

I'm going to go take a nice walk in a bit because it is beautiful out, I think I'm a little too tired for a run. Then I'll be having dinner- just something quick because I was invited to go to the movies (again!) with my friend, so it might be another late night for me! I work early again tomorrow morning, so I'm sorry if these posts are generally short and uninteresting! Later in the week I'll be eating more interesting meals when I'm not so busy =)

For now, I'm going to go get a little exercise in before I go out for the night, I'll post again after dinner!

Caffeine, please!

I try not to rely on coffee and other caffeinated beverages to keep me going (aside from the occasional soy latte pep-me-up)... I usually have a cup of coffee in the morning and thats it. But today, I definately feel like I need the caffeine!

Yesterday I spent all day and all night with my friends! It was quite the busy day. I raced in the morning and although it wasn't my best time, it was the toughest course I've done all season so I still felt I did pretty well- I came in #26 overall. Immediately after the race I had my favorite post-race snack, a juicy orange, and then a while after I had a peach soy yogurt and a couple strawberries to hold me until lunch.

For lunch I went to Panera Bread with my friends, where they didn't have the black bean soup as I had hoped (all out) but the did have the Medditeranean Veggie which I also love (it's vegetarian, not vegan). After we ate we also shared a couple small pieces of the no-pudge brownies I made Eric for his birthday, which he loved!

After lunch, I hung out with my friends a bit, we just wanted a low key day, so we walked around the mall a bit, went back to my friend's house and played some games, it was a good time! Then, my friend Danielle texted me asking if we'd come visit her at work. This is where my eating habits went a little haywire. It is insisted, every time I go into the Podhead, that I get gelato. And since gelato is one of my favorite things, it's pretty hard to refuse. But yesterday, since I had just eaten a fairly big lunch as well as a couple small brownies, I didn't want another big treat. Danielle made me something anyway- a little taste, half the size of a regular, three tiny scoops of sorbetto- mango, berry and coconut. It was definately another treat, but hit the spot in a light way.

The party plans got a little backed up when not everyone showed up when they were supposed to, so we sat and talked at the Podhead to kill time, and eventually headed down to Eric's house where everyone was waiting. He was so surprised, it was great! We had a really fun time, overall. I met a lot of his friends and his sister's friends, so it was nice =). There was some food for me to eat- not much, but something. For dinner I had a couple squares of cheeseless pizza and some tortilla chips with salsa... and yes, I did have two mini cupcakes and a taste of some ice cream cake. ...and a few mini pieces of candy from the pinata. So, I know it was not the best day of eating, for sure. But I'm back on track today, eating much healthier and putting yesterday's fun filled splurges behind me.


Onto today! I had a big breakfast this morning, because I'm heading to work and know I won't be able to eat for a good few hours. So, I had 2 cups of Kashi Go Lean (honey almond flax) with a few bluberries and a cup of hemp milk. I also had a few big strawberries on the side for some extra fruit. Filled me up well, lets just hope it holds me!!

Off to work now, I packed a simple lunch and snack, so I'll be back to post those later!

Finish line food

This morning I had my standard race mini-breakfast, a mini bagel with 1 tbsp PB and 2 tsp raspberry preserves. I didn't get off to a good foot this moring, I was awoken abruptly and far too early, so I'm not in the best mood right now... hopefully a good race and a nice day with friends will cure that.
Last night I made my friend some "healthy" brownies, but my camera battery died so I didn't get to take any pics of the final product before I packed it all up. Almost immediately after the race today my friend is picking me up for lunch and then mini-golfing during the day to pass the time and distract him while his sister sets up his surprise birthday party!! Then I'll be there most of the night.

I have NO idea what the food situation will be like. We're going to Panera for lunch so I'll probably get one of my usual vegetarian favorites (I should start learning what restaurants have for vegan options!!) and then dinner who knows. I'm bringing a larabar with me, and that plus snacks might be my dinner... we'll see. I'll be back later on then!

These are a few of my favorite things...

What can be better than chocolate and fruit? Nothing, in my mind!
My sister recieved an Edible Arrangements bouquet as a thank you from one of her friends, and she was nice enough to share with me!
I had 3 luscious chocolate dipped strawberries, and savored every rich, creamy bite of my special treat! Mmmm....

(I used some kale from the bouquet for decoration, but I ate it too! I love my greens!)

1. I got my black belt in Okinawin Shorin-ryu when I was in 11th grade, it was my training for my belt that got me into running!

2. I've run my favorite 10 mile race, the Blessing of the Fleet the past two years, but unfortunately this year I’ll be overseas during the race- I’m going to try a half marathon in October instead!

Better than Mickey D's


These are chicken nuggets like you've never seen them before... tonight for dinner I made my family and myself Happy Herbivore's Crispy Chickenless Nuggets from her upcoming cookbook. WOW, were they delicious! I served them alongside some fresh steamed green beans, that were fantastic, in Lindsay's Savory Herb Sauce. This was a great combo! dipped the nuggets in a little ketchup, and oh my do they beat any other chickenless nugget I've had by a long shot! I had 4 big nuggets and a bunch of green beans, but I was super hungry, and they were sooo good I actually served myself one more tiny nugget and a few more green beans. Then I was satisfied!

Second helping:

This afternoon I snacked on an odwalla chocowalla bar and some grapes on my way to get my hair done.

I got some pretty blond hilights and a slight trim so my hair will be nice and easy to do for the summer. Afterwards I stopped by the health food door next door, picked up a few larabars, some dried cherries for swiss oats, more vegan chocolate chips, and a couple other items for meals later this week.

I'm pretty full from dinner, but my sister got a package from her friend today- dark chocolate covered strawberries, and she asked me if I'd like a few, so I might have some as a treat later! I'm also baking my friend some brownies for his birthday tomorrow. Unfortunately I couldn't find an easy enough vegan recipe, but they are very healthy, no butter or oil! I'll post some pics later.
