Today was a loooong, exhausting final day of classes for the week... but I sure am glad the week is over!!
I woke up bright and early, made my breakfast and made lunch while eating on the go!
For breakfast I made overnight oats, with 1/2 cup rolled oats, 1/2 cup water, and added 1 tbsp PB, a big sliced banana, and about 1/2 cup chobani. Topped with cinnamon, and I had a delicious fueling breakfast!
After breakfast, I headed to the gym for my workout- I did 30 minutes on the elliptical and 10 minutes on the bike. For strength I worked on my legs; doing 2 sets of 15 exercises on 5 different machines. Is anyone interested in what exercises I do? If so, I'll start posting my workouts along with meals.
After working out and showering, I headed to campus for class. The morning consisted of a statistics-filled food management class (boooring if you ask me!) and a challenging Anatomy class. We're starting with bones, which are my least favorite part of anatomy. I hate memorizing all those names!!
Afterwards I had lunch at the library; I packed myself a hummus (1/4 cup), spinach and provolone sandwich on sprouted grain bread, some carrots and an apple.
This was just enough to hold me over until I had my snack before work- a Balance Pure bar.
I also forgot to mention my post-workout snack; 1 cup nonfat soy milk, with a scoop of Jay Robb chocolate protein powder. The perfect recovery drink!
Work went ok, my sister, cousin and mom stopped by to say hi so that was nice, and my dinner was quite good for a quick dinner! I have a new favorite tuna- these bumble bee tuna bowls! They're so easy to pack, simple ingredients, not too much sodium and super tasty! I had my tuna with some wheat crackers and 1/2 a red bell pepper.
Back home, I just snacked on a big bowl of grapes while waiting for my friend Eric to stop by. My roommates out for the night, and I'm a bit nervous to be here all alone, I haven't gotten used to the house yet!
