Easy dinner

I had a quick, easy yummy dinner tonight- some vegetarian chili and a side of garlic seasoned steamed cauliflower. The birdseye frozen veggies were on sale at stop and shop, so I picked up a big bag, made it tonight; ate 2 servings of cauliflower and saved the other to have with a work dinner! Perfect!

This was about 2 cups vegetarian chili (Health Valley Three Bean brand) and 2 cups cauliflower, ~400 kcal, 5 g fat
I'm full for now, but I'll definately be getting some more fruit in today with my snack later!

thanks for the suggestions! I'll definitely keep those in mind. I love, love, love Gardenburger and Boca! and I'll have to try the Morningstar Farm's Black Bean, I heard it's very good. and your dinner tonight looks so delicious. keep up the good work

Hey Kristin! That is SO weird, my mom and I were just talking about chili today- I just may whip up a batch -either ground turkey or vegitarian, both amazing but my dad refuses to eat anything that DOESN'T have meat in it (which is part of the reason I was only a vegitarian for two years, haha). I'm glad to hear that you had a relatively relaxing workout. I'm trying to gain to be healthier as well and it's so great to see you do a workout that isn't SUPER intense- I actually managed to take it easy today and am having difficulty not feeling guilty about it. But in the end, for us, more cardio is NOT a good thing, but enough to keep the heart healthy is still okay, right? Have a great saturday night!

Jess- Why don't you try using soy crumbles instead of turkey meat and see if you fool him?? I did that with my family, and they're hooked! They love the "faux meat" just as much as the real stuff! The key is the spices- if the spices are just right, the taste is perfect anyway!
My favorite brands are Morningstar Veggie Crumbles (they come frozen and taste surprisingly meaty!) and Lightlife Gimme Lean Sausage (it looks kind of like a giant sausage, you crumble it!)

I must admit, I do tend to get obsessive about the amount of days I run, especially during training, but I know my body needs rest- and the rest was much needed!
