"Theres cookie all over my camera!"

That was my exact explanation at approximately 6:30 a.m. this morning when I groggily dragged myself out of my bed and threw the contents of my purse on my bed (contents: phone, id, $3, lipgloss, gum, two cups (?), a cookie covered camera and a whole lot of crumbs) -I got home way too late to get my stuff together last night...

I met the cookie monster last night. Yes, I ate a couple cookies.
Tyler, Nick and I may have had a little too much fun at the party...
ah, well it was a good time.

Dinner last night was definately not the healthiest- I got out late, as did Nick, so for a pre-halloween treat we ordered pizza for dinner. I kept it to two pieces, which I was quite proud of because I LOVE hawaiian pizza! I kept picking at the pineapple after I finished my pieces. We ordered the honolulu special, which had bacon on it as well; so it was DEFINATELY an indulgence, but at least I stuck with a good portion.

As for today, HAPPY HALLOWEEN!
My favorite holiday of the year! If it were up to me, Halloween would be an international holiday, that everyone has off so we can all have a nice 24 hours of good, scary halloween fun!
Unfortunately, I have to squeeze a bit of work in between my fun... but I'm having fun nevertheless!

This morning, as tired as I was I was able to quickly conjure up some healthy eats to bring with me today. I had 1/2 a pb clif bar for a pre-gym snack, and went to the gym for an hour long workout- 30 minutes elliptical, 30 minutes strength. I was quite tired though (I think I've said that a few times already... hehe) so my strength session was not as intense as I would have liked.
For breakfast on the go I had my usual- a 0% chobani, banana and granola pack.

Lunch today I packed a whole mess of spinach and tomatoes, and a 3-oz pack of tuna mixed with sliced black olives, nayo, dijon and lemon juice to go on top. For sides I packed (can you guess? I'm boring...) carrots and an apple.

I also packed a delish Cherry Pecan Balance Pure bar for a snack later on... I'm picking my sister up after school, we're finding her a costume and then her bf, her bff, my bf, me and my roomie (catch all those abbreviations?) are coming over for a big italian-style pre-halloween dinner!

And then it's partying all night halloween style! Pics from yesterday and today up tomorrow, I PROMISE!

Magnificent mush

Admittedly, I am a big mush fan. I love crunch, and I especially love chew, but mush... as long as it's tasty mush can just be so great! I joke around with my mom; "I can't decide if I'm 5 or 95" when I text her craving pudding, like the other night... last night after studying I had another mushy vanilla pudding delight before settling in for the night.

This morning I woke up, and found out the unfortunately that time of year has come, when I throw in my underarmour and say "thats enough"... the cold weather is here and I won't be running outside any time soon. Unless of course it warms up. This morning I slipped on my underarmour and a long sleeve skirt and got ready to head out for a run... 5 minutes into it my eyes were watering, my ears were frozen and my hands were numb. So I reluctantly headed back inside- I really wanted to run, but not in those bitter cold conditions. Instead I did 20 minutes of 10 reps of 5 strength exercises, 3 sets each, and 1 minute of planks before having to get ready for the day.

Breakfast was... you guessed it! A big bowl of mush- oatmeal mush that is! I combined 1/2 cup rolled oats with 1/2 cup water and 1/2 cup (the remainder) of vanilla hemp milk, threw in a banana, 1/2 cup 0% chobani and threw the rest of the blueberries, as well as a drizzle of pure maple syrup on the top for a sweet, creamy, filling mushy bowl of oats! Yum!

For lunch I made myself another big chickpea salad using spinach, tomatoes, green pepper, olives, onions and 1/2 cup chickpeas with some balsamic vin. I also packed carrots and 1/2 cup cottage cheese for more protein.

Snacks today are a fruit&nut KIND bar and an apple.

I'm leaving early this morning- I have a meeting with my advisor at 10, then I'm spending the morning studying before my classes this evening. It is DEFINATELY going to be a long day but I get to finish it off with some delicious take-out and my first HALLOWEEN PARTY of the year!!

I can't believe it's almost November!

Losing my pants

Well, I have a fun story for you all...
This morning it was way too windy to go outside for a run, so I let my roommate know I wasn't leaving at 9, packed up my stuff quickly at 7, snacked on 1/2 a crunchy pb clif bar and headed to the gym early for a nice cardio workout. I ran light hills for 20 minutes and then walked on a 10% incline on the treadmill for another 10. I was 10 minutes into biking when I started thinking about getting ready (why, I'm really not sure, but I'm glad I did...) because it dawned on me... i had forgotten pants!! All I had with me were the stinky, sweaty workout pants I was wearing during my workout- and I was not going to school in those (didn't really match with my cute green tank and italian scarf... haha) so I immediately jumped off the bike and sped all the way home to shower in a flash and change before school. I scarfed down a banana on my way back to the house and ate my breakfast- 1/2 a cup of blueberries, 1/2 a cup of kashi go lean and 1 cup 0% chobani on the way to school.

Luckily, I made it on time, grabbed a coffee and headed to classes. The day got progressively better, I got GREAT news from the Anatomy front- our test is being switched from Monday until Wednesday, which means two more days of studying- AND I can enjoy my favorite holiday weekend guilt-free! Whoo hoo!
I felt like I was walking on air when I headed to the library to eat my lunch and do some work before leaving for the day. I had my fave lunch- classic turkey sammie, carrots and an apple. Boring to you, but always exciting and tasty to me!!

After some work and lunch, my friend Eric and I headed up state to do some thrift store shopping and find him a funny shirt for halloween. We found the UGLIEST shirt for $4.99- perfect! I also found a cool vintage glass I'm giving to someone as part of their christmas present (this was a bit more than $4.99, but worth it!). On the way home from shopping I tried a new flavor of Pure Protein bars- chocolate chip. Not impressed. I will not be buying this one again. I LOVE the PB, the smores is eh, the Hot n'Healthy bars are to die for... and this, yuck. Very protein-y, and not enough chocolatey flavor at all. The only benefit was that it held me over until I made dinner.

Dinner was another disappointment at first- I went to grab some frozen salmon for dinner, and the box was empty! So I improved and made my favorite boy-style meal- sausage sub with peppers & onions, and fries. Well my version was a bit healthier than that sounds- I used Pepperidge farm "white whole wheat" rolls, with sundried tomato chicken sausage, sauteed green peppers and onions, dijon mustard, and a slice of melty reduced fat cheddar. Mmm! For my "fries" I had crispy baked sweet potato fries dipped in a bit of ketchup. A bit burnt, just how I like 'em!

This meal was sooo filling, it felt like a big indulgence but it was really pretty healthy overall! Love it!
No pictures now because I'm at the University Library doing some Anatomy work but I'll post them soon.
I probably won't be consistently posting for the next day or so, but I'll do the best I can! Halloween starts tomorrow night for me! I'm so excited!

Sugar-less but sweet

What is up with my sweet tooth tonight? I feel like I could munch on gobs of brown sugar and be perfectly content. Of course I'm not going to do that, but I did have a sweet treat to subside my craaazy craving- a sugar-free vanilla pudding, and some sweetened dried cherries.

Did the trick! Although I'm not a big fan of sugar-free products, I'm trying to cut back on my sugar early week, so this was a good low sugar alternative to settle my sweet desire.

I did some anatomy, did some kinesiology, now it's really time to relax! Night all!

Nothin' at all

There are certain times during the day I need to give myself time to do nothing at all. Well, nothing specific. I'll do whatever I'm feeling- listen to music, write, look at blogs, watch some of a dvd, read some recipes online...
Without these "nothing" times I go CRAZY because my days are always so jam packed!

Today I did about 2.5 hours worth of school work at home before going to school for three hours of classes, between which I did 2.5 more hours of work, only taking a 20 minute break for my yogurt snack- and now I'm back at home, blogging then having some "nothing time" before I get back to some work. So much is going on lately! I just finished a Writing paper and we're starting a new one, I have a draft of a 5 page research paper due on Thursday, I have an Anatomy quiz and exam on Monday... At least I have a couple halloween parties to look forward to on Thursday and my own on Friday... I can't wait until the end of the week!

When I got home today I was NOT in the mood to do any sort of cooking (I know, I must be exhausted!) so I just heated up leftovers from Monday along with the last little bit of my frozen steamed broccoli.

It was good, but I was left with a sweet craving after I finished- I went to have a tiny bite of my last leftover pumpkin muffin (I snuck one in an air tight container so it would last! Still moist!

And then I promptly reached back into the container and had the other 1/4- so I ate 1/2 a muffin in total.
I'm still not TOTALLY full... so I might have to go back for another snack in a bit as well. My appetite has been so weird lately!
I'm trying to keep it as healthy as I can these first few days of the week, because I KNOW there will be a ton of snacking for halloween- which I let myself do, because it's only a couple days a year and halloween is my FAVORITE holiday! And I'll be sure to get myself right back on track as soon as the holiday is over.

Anyway, I'm off to study- I'll post the pics as soon as blogger lets me, and I'll be posting the exercises soon!

Berries make it better

Last night I almost forgot that Heroes was on!! How could I forget my favorite new show?!? Well, I'm glad Nick came over and reminded me, because it was quite the good episode! I stayed up to watch both Heroes and My Own Worst Enemy (also a great 'sode!) before settling in for bed. I got a craving for something sweet during the shows, so I grabbed a red anjou pear to snack on, and made myself a warm cup of Apple Cinnamon tea to settle my sweet tooth.

This morning I woke up to a gross, rainy, windy day- which I was NOT excited about, because I had planned on going for a nice run!! I decided to make some oats for breakfast instead and decide what to do for a workout later.
For breakfast I cooked up some creamy oats using 1 cup nonfat soymilk and 1/2 cup rolled oats, with 1 big spoonful PB mixed in, as well as a big banana and my favorite addition- blueberries! I can not believe they're still around in October for less than $6!! They were ON SALE this week at the store, so I had to snag some!

Mmm, so much better with berries!!

I did some Anatomy work (I have an exam coming up- I NEED to pass this one!!) and then decided to try out the new workout Nick suggested. I told him I was in a bit of a workout rut, I need something new to strengthen me and get my heart moving. Well, he is a soon-to-graduate Kinesiology major, so he knows a good amount (ok, wayyyy more than me!) about this stuff so he gave me a quick but effective workout to try.
He suggested 3 sets of the 4 exercises, 20 reps each- but I only made it to 15 reps of each because I'm just starting out! It was a GREAT routine, I was sweating more than I have ever sweat doing strength before- and it only took 20 minutes! I finished my routine off with some ab work as well- 3 sets of 15 of 4 exercises on the bosu ball, plus 4 sets of 15 of 3 floor exercises, and 2 1-minute side planks for a 20 minute ab routine. I'd love to post the workout for you- but I'll have to ask him to describe them for me again in a bit more detail, I don't think I'd do it well enough in my own words!

After my workout I was HUNGRY- so I made myself my new favorite Protein-Power breakfast! I used 2 egg whites and 1 egg to make myself an omelette, to which I added 1 slice reduced-fat cheddar cheese and 2 slices honey deli ham (4 slices is a serving). I had this with some organic ketchup, and had some carrots and an apple for some fiber and extra nutrients to round out my meal. Ohmigosh I totally forgot home much I LOVE ham n' cheese omelets! This was delicious, and with 25 grams of protein, it should definately hold me over for the afternoon!

I packed myself the usual vanilla chobani for an afternoon snack- I'm headed to Kinesiology class soon, we have another lab which I'm pretty excited about! Classes are late again today, so dinner won't be too exciting, but I'll post anyway later tonight!

A crazy start

Whew! What a couple of days. This was definately a crazy first two days of the week. I'm actually not even home yet, I'm in the library at school, blogging quickly before I meet with my Writing group- then I get to head back home, eat a quick dinner and relax for the evening!

Yesterday was so busy I didn't have time to blog at all! My sister came over at night, and in the morning I did some yoga (40 minutes of MTV's power yoga) and then had a quick brekkie before heading to work for 9. I cooked up the last of the ezekiel cereal- 1/2 cup, along with 1/2 cup vanilla hemp milk, a banana and some raisins.

Since I didn't have as much cereal as I usually have, I had a Tall Cafe Misto from Starbucks for some extra protein (and it was quite tasty!) as a filler before work.
Food for the day was quick and simple as it usually is when I work. I packed some almonds for a snack (I ate the mid-morning), a can of Amy's split pea soup and some carrots.

This was nice and filling! I snacked on an apple on the way home, and had 1/2 cup 0% chobani with a dash of cinnamon as a snack when I got back to the house.

After getting some work done, I set out to make a new recipe for Nick and myself- I am LOVING these delicious, healthy recipes in Self's November issue! They're all online here- I would DEFINATELY check them out! Last night I made Shrimp Scampi with Pasta, Spinach, Cherry Tomatoes and Olives- YUM! I had a small serving of pasta with a whole bunch of shrimp- my favorite! It was delicious, and I also ended up having a couple glasses of white wine (I couldn't resist when it was already out from cooking) Which was good, but I do know that more than one glass of wine every once in a while is a lot of empty calories, so I like to try and control my intake as much as I love it.

This morning I woke up surprisingly alert and awake after the wine I drank (I have a fairly high tolerance). I went to the gym as planned, and did 40 minutes of cardio, as well as 25 minutes of arms- the usual routine, I'm going to be adding more weight soon because I'm looking for hypertrophy and my arms are getting used to the weights I'm using now, so I know I'm not building any more muscle! Before I left I had 1/2 a pb chocolate chip Clif bar, and for breakfast I had the usual cereal/yogurt/banana combo:

Lunch today was colorful! I made myself a huge spinach salad, along with some cottage cheese (1/2 cup) and carrots. The salad had tomato, onions, roasted red pepper, olives and 1/2 cup chickpeas, and I drizzled it all with balsamic vin. Simple and tasty, and packed with nurients! For a snack I tried one of my new Pure Protein bars. I LOVED THIS ONE!! It tasted just like a cinnamon bun to me, definately more of a dessert than a protein bar- I can guarantee these will be in my cart again soon!

After lab (which was not fun; I found out I didn't do well on my lab practical...) I snacked on an apple before meeting my writing group for a while.

Now it's 8:00 p.m. and I'm finally home, just finishing my dinner. This day went a LOT longer than planned and boy am I exhausted! As soon as I came home I threw the last serving of my home made Turkey Chili I made a couple weeks ago and froze, which I had with a small dollop of light sour cream and some micro steamed broccoli. This was the perfect quick meal after a long day- quick and hearty, I'm nice, cozy and full now.

BUT the night is not over yet (is it ever?!?!) I still have some anatomy to do before I can settle down- I hope I get some stuff done FAST because I have a new L Word DVD I am dying to lay on the couch and watch!!

Stood up

Well, I didn't end up going to lunch with Katrina- she hadn't realized when we'd finalized our plans for so she accidentally stood me up at lunch! But I understood, so we decided we'd make plans soon and I headed down the street to Markos for lunch instead. I got my favorite healthy baked falafel, which consisted of baked falafel, lettuce, tomato, pickles, cucumbers, hummus and the BEST part- fresh baked pita bread! Mmm, I devoured this while taking a lovely break overlooking the ocean on the seawall.

After lunch I went grocery shopping, and picked up some essentials:

Produce- spinach, bananas, red potatoes, tomato, a pear (we still have tons of apples!) and a lemon.

Blueberries, grape tomatoes, carrots, cilantro

Other stuff- Plain chobani, black beans, 1% cottage cheese, eggs, soy milk

Two fun new tries- Quaker Oatmeal Squares, and two new Pure Protein bars (so excited to try these!!)

In the afternoon, I snacked on a vanilla chobani while doing some studying for Anatomy.

For dinner, I headed down the street to my friend Eric's house to make some dinner and watch some hockey. I made a new recipe from Self which I enjoyed very much- Skinny General Tso's Chicken! I doubled the recipe, and we each had 1 chicken breast with a little sticky rice (about 1/2 cup) and some steamed broccoli. Yum!

This was nice and filling, but my sister came over about an hour later and we were up for some baking so we decided to make banana bread! Nick had some quite over-ripe bananas that were begging to be cooked into a sweet treat Well, somehow in the process of moving I lost my loaf pan (how I have no idea...), so we quickly decided against the bread and made banana muffins instead! We just HAD to try one when they were all done!

Whole wheat, low fat and deeeelicious!

Night all! I have work tomorrow morning so I won't be posting until later, but I got my laptop back so I'll be able to post more regularly!

Chipotle love

Good morning!

I'm at my parents' house blogging for the last time, because my computer is on it's way!! I'm so excited! I'll finally be able to do some homework this afternoon on my laptop!

But for now, I just uploaded a bunch of pictures from the last couple of days for you to check out. Last night Nick and I stopped at Chipotle before going to the costume store- I was so excited for mexican!! I got the "Burrito bol", which is basically a burrito in a bowl; instead of in a tortilla. It was cilantro lime rice, topped with black beans, seasoned chicken, and I had them add some shredded cheese- they added SOOO much though, I scooped off 1/2 before digging in! I also had both mild and spicy green salsa. Mmm! I ate about 3/4 of this big bowl.
We went to the costume store, and then headed home pretty early because we were both tired from a long week.

This morning I woke up and had a big bowl of Kashi U cereal- I liked this, it filled me up and I liked the blueberries mixed in with the bran flakes. I had 1 cup of cereal with a cup of nonfat soy milk and a pear on the side.

When I got to my parents' house I went for a nice 3-mile run around the neighborhood before blogging. Now I'm at the computer for a while, snacking on a juicy apple before I get ready to go out to lunch with one of my friends from high school who is back home for the weekend! Then the day will be spent grocery shopping and doing some work at home. Should be an easy Saturday!

Something's fishy

Happy Friday everyone!
Last night I got a great night's sleep, and I woke up this morning with a ton of energy to get a bunch of studying done today before my packed weekend! I don't have class until 11 today, so that gives me ample time to catch up on some blogs and do some lab studying before Anatomy class.

For dinner last night we had a HUGE feast of sushi! Tyler grabbed takeout for me before I got out of class, and it was all I could do to NOT dig into the sushi boxes before we got home! However, it was just Nick and I for dinner so we ended up with a LOT of food- he made noodles to go along with the plethora of sushi, and I was pretty stuffed by the end, even though I felt like we hardly made a dent in the food! For sushi I ordered the Sushi combo, which had 8 pieces of nigiri (basic sushi-raw fish on rice), which I ate two of- and tuna roll, which I ate two of as well. We also got a salmon-avocado roll, which I had two of (I guess I was on a "2 of each" pattern!) and we also ordered steamed shumai dumplings, which I had-guess how many- two! of. It came with a garden salad which I had with a bit of mustard dressing, and Nick put together some japanese noodles topped with pickled ginger that I only made a tiny dent in because there were SO many!! Everything was delicious, though!


This morning I was ready for a workout after my big dinner, so I snacked on 1/2 a chocolate chip PB clif bar and headed to the gym where I did my usual 30 minute elliptical routine (light hills) as well as 30 minutes of arms. After showering I headed to Bagelz to grab a pumpkin spice coffee (this time it was really JUST coffee!) but I added a (kind of big) splash of 1% milk to it. For my on the go breakfast I packed a honey/almond granola packet, 0% chobani and banana. This should keep me going all morning!

For lunch I packed my standard turkey sammie with all the usual fixin's and a juicy apple. For a snack I packed a chocolate peanut butter Pure Protein bar.

After all my classes end around 4, I might be taking another trip up to Warwick to go to the costume shop to help Nick find a fun halloween costume.

Accomplished

I got a LOT done yesterday, which I was very happy about! I got all my reading done for both classes, plus some studying for Nutrition and Anatomy.

I didn't need another snack after I had the puffins, so I ate an early dinner instead. I made myself a delicious fritatta using 2 eggwhites, 1 egg, spinach, tomato, sauteed & seasoned onions/mushrooms (it's a frozen blend), and a sprinkle of mozarella cheese. Yum! I love how easy and satisfying this dish is. And you only need one pan! On the side I had two morningstar vegetarian sausages for some more protein!

After dinner I did a bunch of work, did the dishes, cleaned up a bit, I decided it was time for some rest so I spent the rest of the evening louging and reading. While I was reading I got hungry again, so I snacked on a big red anjou pear (my favorite kind!), that was perfectly ripe. I was still craving something sweet though, so I went for 1/2 cup 0% Vanilla Chobani while reading about Peanut Butter Chocolate Cookies in Cooking Light, which I think I just might have to try!

This morning I woke up very well rested. I immediately made myself a delicious filling breakfast of 3/4 cup ezekiel with 3/4 cup vanilla hemp milk, as well as a big banana and a few extra raisins- I love the chew they give it!

I did a bit of studying, and went for a run mid-morning- I ran 3 miles, and then came back inside and did about 15 minutes of ab workouts.
I was super hungry at this point, so I made myself a huge salad for lunch. I started with a big handful of baby spinach, and added a few chopped roasted red peppers, sliced black olives, a few pieces of onion, 1/4 tomato and 1/2 cup chickpeas, all drizzled with about a tablespoon of Goddess Dressing. I also had a 0% plain Chobani with a dash of cinnamon and a few baby carrots. All the veggies in this dish gave me a healthy dose of phytochemicals, and all the protein from the Chobani and the chickpeas filled me right up! I love my nutrients!

Right now I'm doing some last minute online research before I head over to school. For a snack I packed one of my pumpkin muffins and a small apple. For dinner tonight we're doing takeout- sushi, my favorite!

Munchie Mania

It seems I've been having the munchies lately. My normal meals/snacks just aren't filling me as well as usual, and I've been feeling empty, wanting something to nibble on!

I just got back from studying at school, so I don't have any good pictures (aside from one lame cell pic) right now, but I'll let you imagine my munches!

Last night I managed to get a lot of work done for my research paper on the Effects of exercise on the prevention of cardiovascular disease for my Kinesiology class- but it took me an hour and a half to find 5 good sources! I ate my muffin and sipped on some ginger tea while searching, but I was STILL hungry, so I grabbed a pear from Mom's fruit bowl to snack on as well.

After deciding to pack it up for the night and head home, Nick called me and I ended up staying up an extra hour watching TV- so although I got a nice rest, it was a short night's sleep.

This morning I woke up for my usual 30 minute full body routine I do on Wednesdays- I can DEFINATELY feel my abs today after the exercises I did yesterday so I took it slightly easy in the ab area this morning!
After I exercised I made my breakfast and chowed down while prepping my lunch- a PB&J Waffle Sammie, complete with 2 blueberry Kashi Go Lean waffles, 1 tbsp each PB & Raspberry preserves and a big banana.

On my way to school I stopped at the DD (Dunkin Donuts) to try one of their seasonal Pumpkin Coffees. I ordered a small with a splash of skim milk, and at first I thought they had given me a bit more than I liked; because it was very sweet...but after looking at the website I found out that "pumpkin coffee" is not really just coffee at all- it's a full drink, sweetened and with milk and a small is 160 calories, 5 grams of fat. Not what I was looking for! Oh, well- a mistake I will not make again, thats for sure. I'll stick to my black coffee with a splash of soy for now on.

For the day's food I packed a Macintosh apple which I snacked on during Anatomy class mid-morning, and for lunch another one of my same-old same-old turkey sammie (all natural turkey, swiss laughing cow light, spinach, pickles, honey flax bread) and the last of my baby carrots.

This filled me for a while, but not for long! My stomach still felt very empty by the time I got to my parents house, so I grabbed a small bowl and filled it with some Peanut Butter Puffins which I'm snacking on as we speak.

Today is just an easy day of studying- I've already gotten a good amount of writing done, now I just have to get started on reading for Anatomy and Kinesiology! I'll be back posting in the next couple of days, as I can!

Boredom Baking

Just what I had expected- my LCD Screen is broken on my laptop (which is why the screen was half black yesterday afternoon!) so I will be blogging from the parents' house for the next 3-5 days- I'll try and post once a day as usual, I'll try for pictures as well!

Anyways, here are my eats-

Last night I got home from doing work at my parents' house, and I was totally beat from doing work all day. All I wanted to do was relax, but I knew once I was down (on the couch that is!) I was down! There was some time before Heroes came on, and I needed something to cure my boredom (usually I'd browse the web!)... so I decided to bake!
I had 3/4 can of pumpkin lying around, so I decided to modify The BEST pumpkin muffins from Vegan with a Vengeance to what I had on hand, and create Maple-Walnut Pumpkin muffins! I'll post my modified version of the recipe, which uses brown sugar instead of regular, maple instead of molasses, and 1/2 the oil.

They came out fab!
I had my fair share of spoon & bowl licks, but I didn't want one that night- I already had enough "foody" food for the day. Instead, I had Tyler try one (he's eaten two since they were out of the oven- I think thats a good sign), and I stuck with something sweet and healthy to nibble on during my Monday night shows- a cut up peach, nice and juicy! I'm getting in as many peaches as I can before they're gone for the season, which I know will be far too soon!

Sure enough, I barely made it through My Own Worst Enemy before I was ready for bed. I had a nice night's sleep, and I got to sleep a whole hour longer than usual because I don't work on Tuesdays anymore! Man, did I need that extra hour.
For breakfast I whipped up a bowl of protein-packed oats using 1/2 cup oats made in water, with a small spoonful of PB, 1 big banana and 1/2 cup 1% whipped cottage cheese. Topped with a dash of cinnamon, and I had a doubleshot of esresso made in my little italian espresso maker!

I spent the morning doing work, then I went for a nice run around the neighborhood- AGAIN, I ran longer than usual and it was only 25 minutes! Woah, I'm definately speeding up again! I came home and did 20 minutes of ab exercises before getting my lunch ready. For lunch, I heated up a portion of Jenna's Chunky Lentil Stew, and had it with some carrots and an apple.

All the fiber held me through my afternoon class, but I was definately ready for a snack at 3! I had a vanilla chobani to hold me over, but I was still a bit hungry all evening.

When I got home I made my dinner as quick as possible! I used another one of Jenna's creations for inspiration- I had a huge salad that consisted of a bed of baby spinach topped with 1/2 a big tomato, some dried cherries, a sprinkle of feta and a 4-oz piece of grilled chicken, all drizzled in balsamic vinegar. On the side I had a little leftover red pepper risotto. YUM! This was delicious and filling, just what I needed!

Now I'm back at the parents' house, hopefully getting some work done and then heading back home late for some sleep. I brought a pumpkin muffin with me to snack on that I plan on having in a little bit.

Time to do some research!

Technological Trouble

I'm blogging from the parents' house tonight, unfortunately I have been having some laptop trouble, and my sick laptop is going to have to spend a couple days at the Apple Store to try and get him better! I'll miss him while he's gone, thats for sure!

Unfortunately there won't be any pictures up tonight but I'll post them once my laptop's fixed!
This morning I woke up and went to the gym in usual Monday fashion, I did 40 minutes of cardio- 30 of hills on the elliptical and a 10 minute speed bike. Afterwards I finished up with 25 minutes of free weights, doing biceps, triceps and some lat pulldowns.

For a pre-run snack I had a chocolate chip mini clif bar. I think I like having 1/2 a bar better- this one left me hungry halfway through weights! I had my fave on the go breakfast, of course- banana, chobani vanilla, 1 cup kashi go lean crunch.

Lunch was standard as well- a turkey sammie using 2 slices all natural turkey, spinach, pickles, swiss laughing cow on two sliced honey wheat. My usual sides as well, apple and carrots! Sorry to be so boring, but my lunches have to be quick to make, easy to eat, balanced and filling- so I usually have a few standard ones I rotate between!

I snacked on a Peanut Butter Chocolate Pure Protein bar before my lab Practical, which went pretty well. However I wasn't too happy when it went late and I missed the bus down to the commuter lot and I had to walk in the cold! =( I walked fast, thats for sure!

I headed to my parents house to do some online work and I was STARVING, so I scoped out my parents' fridge and got the approval from my mom to steal their leftover Meatless meatballs in a red sauce, that I heated and plopped on a multigrain loaf with some parmesan cheese and steamed green beans on the side. It was delicious and I was glad I had something healthy to eat when I was STARVING after lab!

I'm headed home soon, for a relaxing night in- Heroes is on, I'm so excited!

Spooky Sunday

Wow, I can't believe it's only 11pm, because I feel like it's about 2am, this day has been soooo long!
I woke up nice and early and had 1/2 a banana before doing a 40-minute power yoga session before I had to get ready for work. This morning I wanted something warm because it was freeezing, so I decided on a trusty filling bowl of 3/4 cup Ezekiel with 3/4 cup vanilla hemp and the other 1/2 of my banana. I also added a few extra raisins for good measure. Sweet and satisfying!

Food for the day was simple- I packed some almonds I ate mid-morning and a can of Amy's black bean soup with some carrot sticks for lunch.

After work I was famished, so I had an apple on the way home- and when I got back to myself I had a small bowl of 1% whipped cottage cheese.


This was enough to hold me until the delicious dinner I made! My favorite pan seared salmon- rubbed with garlic powder, a dash of chili powder, salt and pepper and cooked a couple minutes each side, just to make it nice and hot on the outside. It was fab! On the side we had some steamed broccoli and Red Pepper Risotto, recipe by me- I'll be posting it soon! It came out awesome, I was very proud of it!


After dinner, Nick and I headed to meet up with my sister Alison and her best friend Meagan to go to the Field of Screams for a spooky haunted hayride and fright walk! It was so much fun, I actually got a bit freaked out during the fright walk, it was well worth the cold we were out in. But, to warm up afterwards we decided to go for one of my favorite fall treats- Hot Apple Cider. I drank my whole cup, and had a couple handfuls of popcorn Nick and I got to share.

It was a great way to end the weekend, now I'm about to go get some rest before my big Lab Practical tomorrow afternoon!
