"Steak" and mash for vegetarians

Sorry this post is another combined lunch-snack-dinner one, I've been busy!
I had a lovely afternoon, despite the heavy rains... I had brunch with my friend Tyler at 12, I had a big egg white omelet made-to-order with some mozarella, spinach, tomatoes, onion and broccoli as well as a bowl of fruit- some strawberries and melon.




Perfectly filling to fuel our "house shopping!" We spent the next couple of hours looking at places for rent, found some good options and got a lot of numbers so if all goes well we'll find a place (fingers crossed!) and I'll have a kitchen next year!
Afterwards, we decided to surprise my friend Danielle at work so of course we had to get gelato! (As Tyler commented, "House looking sure does work up an appetite!" haha) I just wanted something small, so I had Danielle make me a delicious sweet italian treat- a scoop of mango sorbetto topped with espresso! Mmm it was a nice light treat, delish!



For dinner tonight I tried a couple new things- I finally made the chickpea cutlets I've been hearing so much about, and they were FANTASTIC! The best veggie "steaks" i've ever tried, hands down! So chewy and filling. I topped mine with some of Jenna's invented agave-dijon sauce, and it was the perfect topping!
I also made some mashed cauliflower with coriander and garlic, which was also delicious, as well as a side of whole wheat couscous and some steamed carrots. A great balance, always my goal!




Now I'm off to the basketball game, go URI!
