Sunny and green!

Seeing as green is my favorite color, it is definately making me smile seeing it everywhere on this truly lovely St. Patrick's day! This really is the nicest day we've had in a long, long while- sunny, warm, let me tell you, it is very welcomed! My day has been awesome so far, after my little set back this morning I went for a nice run/walk (45 minutes in total) and got ready to head up to Whole Foods. My mom and I had lunch as soon as we arrived- I started with a salad in the middle of mixed greens, some tomatoes, cucumber, bell pepper, broccoli and onions, that I drizzled with a bit of apple cider vinegar, and I filled the outside edges of my plate with delicious prepared salads. Counter clockwise, starting at the salad, I had a bit of roasted garlic/tomato chickpea salad, some curry wheatberry salad (both my favorites! I loveee roasted garlic AND curry, despite the stinkiness!) and a few meatless bits- some tempeh, seared tofu, bbq seitan, and my absolute favorite tofu at W.F.- the sesame! I love this stuff, but it's a little bit higher in fat than the other salads... I enjoyed every bite of it though!


I finished everything except a few bites of curry wheatberry because I was sooo full!
After, we shopped the store for some items for this week (more frozen fruit for smoothies, veggie sausages, feta to make my sister a special pasta salad, some veggies, etc)... plus some easter items (a quorn roast to have instead of ham, mushroom gravy), some items for me back at school (more hempmilk, some KIND and Larabars, my fave cottage cheese, peppered tofurky, stuff to make home made trailmix, MORE PB) and a few more items for tonight and meals this week (veggie horseradish, wheat water crackers to go with dublin cheese, chili ingrediants...) I love whole foods! We got some GREAT organic deals =)
After the exciting (and admittedly slightly more expensive than intended... we picked up some extra bulk items like whole wheat flour and middle eastern couscous!) trip, we headed back down near home... and stopped by Starbucks on the way, where I treated my mom to a tall nonfat Leprechaun Latte! It was a bit warm for a hot drink, but we both enjoyed ours fully! A yummy chocolatey-minty treat for St. Paddy's day!



When I got home, I had the rest of my snack- a nice fruit bowl, 6 tiny strawberries, sliced, and a small kiwi sliced to hold me until dinner.


Which I have to start making now, so I'll get going to do that now... and I'll be back later to post my irish feast!
No soda bread this year, unfortunately (did that last year...) but a cool vegan alternative! Have a great day, drink lots of Guiness (I've been to Ireland, it's much better there, but still the best kind around!)
