Unique combo

After running on the treadmill and making my mom and sister tofurky sandwiches for lunch (they love it!) I realized I was pretty hungry myself, so I opened my fridge and weighed my options. My mom and sis finished the tofurky, so that was out. There are lots of leftovers from meals during the week, but nothing in particular was calling to me...except the pasta salad I made my sister for lunches. She saved me a bit of it, so I decided to have that as the main part of my lunch. I always strive for a good balance in my meals, so I analyzed my choice: whole grains, check. veggies, check. a bit of dairy (feta), check. healthy fats, check. But where was the protein? There's a little in the feta, but definately not enough to hold me over. So I opened my fridge and freezer once again, searching for a good source of those essential amino acids, and noticed my lightlife breakfast sausage patties... I had been craving one at breakfast, but thought the "meat" would be funny with the pb waffle sandwich, so I held off. But why not have it with lunch? No one said soysage is only a breakfast food! "Sausage" goes great with pasta! So it was settled. I cooked myself up a soysage patty to have alongside my pasta salad, squirted a bit of regular mustard mixed with a bit of whole grain dijon to dip, and had an orange on the side for a balanced, filling lunch! Ok, so maybe it was a little random... but tasty!






The eggs are cooking now, so by the time I post and shower they should be ready to paint!

I havent tried those breakfast patties before...do you like them? And congrats on Italy- that sounds like it will be an amazing trip!!

That blog is awesome! Breakfast is my favorite as well!

Emma, I loveee the lightlife patties! They're a good breakfast (or lunch!) side. Only 60 calories, 2 grams of fat and a whopping 8 g of protein- they're made mostly of soy protein, so they have a pretty good nutritional profile =)
