I just finished such a delicious, satisfying dinner- and it only took 5 minutes to make!
I was super hungry by the time I got back from class this evening, so I heated up the rest of my butternut squash soup (2 cups) along with some blue corn tortilla chips and a big salad of spinach, bell pepper, brocco slaw and cucumber drizzled with Annie's Woodstock dressing. Mmm! I ate it all up, and my belly is all nice and full- almost too full because of the pure volume of soup and veggies, but I'm satisfied. =)
For lunch this afternoon I mentioned I was having my favorite lunch- Chick'n Salad, of course! I used my last quorn cutlet and the usual ingredients (the special curry dijon sauce, celery, grapes, red onion) and stuffed it all into a whole wheat pita along with some carrots and an apple. Perfect lunch!
I also snacked on some home made trail mix between classes, but didn't have time to snap a pic- I'm sure you remember what it looks like (banana chips, pumpkin seeds, dried cranberries, mixed nuts).
This filled me up through my Nutrition class until I got back and made my dinner.
Today we were talking about water contamination, which made me nervous about the cute Starbucks plastic water bottle I always carry around with me- sure enough, I turned it over and theres a big "7" on the bottom- the plastic we're supposed to be looking out for. I guess I'm shopping for a new water bottle! Any suggestions?
Today was a pretty easy day, but tiring because it was just so long, so I won't be doing much tonight except a little reading and dishes. I have work the next two nights, so these posts are going to be late, again, and I'm sure I'll be EXHAUSTED by the end of this week- its all work, work, and exams for me! I'll be glad to relax at home and do some baking this weekend.
Gosh, it's only Monday and I'm already hoping for the weekend. Sigh.
**EDIT** I'm currently trying out some new looks for my blog... unfortunately, I'm not very good with the whole blog-technology thing, but I'm working on it!
Any suggestions/help from technologically minded blog readers would be greatly appreciated! Thanks!

I have heard great things about Sigg waterbottles. Today I actually went through my entire house and threw away all of our bottles and plastic that had the number 7. Can you believe that baby bottles are made with the # 7 plastic!
Yes, I definitely recommend Sigg waterbottles. I used an Amazon gift certificate to buy mine a few months ago--I use my Sigg everyday and refill at least once...they have lots of cute designs too:)
