I'm just now sitting down to relax after a jam-packed day! I don't even know where to begin. What didn't I do today?
This morning I went to walk down to the gym for some cardio, and as soon as I left the building I turned around went straight back inside... to take off my jacket and go for a run in the beautiful weather!
I went for my first run outside (on campus) since November. It was glorious! The sun was shining, it was a comfortable temperature and not too windy. My big breakfast fueled me well, although my stomach felt a bit heavy towards the beginning of the run (I had planned on cardio machines, not endurance exercise!). Still, it was an amazing hill-filled 35 minute run, and I felt great and energized afterwards.
I snacked on a few grapes while getting ready to hold me until lunch:
I met up with my friend Tyler a bit later, and we headed into town to grab some lunch. We had planned on going to the Picnic Basket, but there were people spilling out of the door when we arrived, so we decided to change approach and moved up the street to Markos, where I had my favorite baked falafel wrap, filled with lettuce, tomatoes, pickles, home-made hummus and baked falafel. All on a big, thin, doughy pita. Mmm...
I even got Tyler to try a bit of my falafel and I'm happy to report he liked it!
I feel as though I'll be introducing him to a LOT of new, interesting foods over the next year ;)
After lunch, we had a bit of time to kill so we walked around the beach and the dock for a bit, loving the warm, sunny weather before taking another look at our house before we move in September 1st.
The kitchen is super small, but at least I have a stove and a "real" fridge! We had fun looking around and planning our bedrooms.
Later, we decided to explore the neighborhood by taking a nice walk down to the water at the end of our street (we have a small dock) and then Tyler suggested dessert... so, we chose the "healthiest", and tastiest dessert around- gelato, of course!
This blog should probably be renamed "Kristin's Gorges" instead of "Kristin's Nibbles" because I have had quite a LOT of desserts over the past few days... just take my advice more than my actions, I suggest a little more moderation than I've been exhibiting this last week!
I had a small sized mint chip gelato, and it was absolutely decadent!
We chatted, I saw Danielle and hung out with her for a bit, and then we took a quick grocery trip before I dropped Tyler back on campus, loaded up JB (my car) and departed home for the night.
Upon arriving home, my mom informed me she wasn't able to find a couple ingredients needed for dinner this evening, so I set out to the grocery store yet again, picking up the rest of the supplies for dinner as well as some fruit, wheat pitas, hemp milk and ezekiel cereal for the week.
By the time I got home from the store I was STARVING... and of course dinner required some prep! So, I sipped on some sparkling water to cure my growling stomach while I prepared Pan-fried Tempeh from ED&BV, along with her FABULOUS balsamic maple dipping sauce, asparagus roasted in olive oil, salt and pepper, and some quinoa.
This tempeh is SO.GOOD.!!! My mom and sister, who had never had tempeh, loved it as well!
I love how chewy it is, and it went great with the delicious sauce and flavorful sides.
A nice, balanced meal that I devoured completely, because I was so hungry and it was just so tasty!
I'm planning on doing some baking in a bit, and then I have some more work to get done because I was out all day today.

My goodness, "crazy" doesn't even begin to describe your day - it was an absolute whirlwind of activity!! Sounds like an amazing Saturday, indeed.
So fun that you get to move into your new home on September 1st - that dy will be here before you know it!

yum yum yum! I don't think any of your choices are "bad", no guilt for sure...they look tasty and nutritious, and all of your baking/cooking ventures are so impressive!! It seems like you've really become so GREAT in the kitchen, all of your ED&BV creations are drool worthy!! Can't wait to see the baked goodies tonight, I always look forward to your weekend treats!! glad it was a good day, you're house is too cute!
