I got a LOT of work done this afternoon- I finished my chem pre lab so I don't have to worry about that anymore, but it still feels like I have a whole bunch of work to accomplish! It never ends...
I snacked on a bowl of yogurt topped with trail mix (minus banana chips) mid-study:
Tonight for dinner I made myself a very delicious dorm-room creation!
Ginger-teriyaki marinated tofu with steamed veggies and brown rice!
To prepare, I cooked up a Helen's tofu steak, cut it into bite sized chunks and marinated it for about 10 minutes in a deeelicious "Flavor your tofu" marinade I found. While this was marinating, I steamed some fresh snow peas, mushrooms and bell pepper in the microwave, and then heated up a cup of minute brown rice. This brown rice is really good, all it is is brown rice and a bit of sunflower oil. It's so super easy- you just heat it in the micro for a minute and you've got the perfect one cup serving! Definately a healthy staple. I threw it all together and devoured!
This meal was delicious, flavorful, well rounded and filling- I think I found myself another "dorm room staple!"
Mmm veggies, rice and tofu heaven!
I was considering yoga tonight, but I'm not really at the place, financially, to be doing yoga as much as I'd like- I'll have to save it for every couple of weeks, the $14 classes add up!
So, I think I'm staying in tonight, getting some more work done, doing my mountain of dishes and maybe even doing some nice reading to end the night!
