Great to be green!

Today has been a wonderful Earth day! My first class was a bit long, but I survived, and then did some studying while I had my lunch; a tofurkey sandwich on a whole wheat english muffin with some dijon mustard, spinach and cucumber as well as some carrots and a plum. This was good, but I wish I had some FYH cheese to go with it =(

After lunch, I headed over to the Earth Day fair at the quad, met some cool eco friendly people, snagged a few freebies- a whole bunch of seeds to plant, which I'm super excited about, as well as some organic tea and a small pb bar (its organic and whole grain- I can't wait to try it!). My favorite local health food co-op/store, The Alternative food co-op was there, and I was excited to find they were selling one of my faves- veggie wraps, so I grabbed one of those to have instead of my usual soup for a work dinner, and I also bought a GIANT vegan cookie to have as my dessert later on! Those should make work a little more tolerable =)

I'm off to Starbucks for a snack and some studying, then to work, and then I'll be back!

hmmm, I've got no tips on storing your FYH cheese, bummer that it went bad so quickly! Yeah for earth day goodies, I'm getting ready to head to my local food co-op for some earthly shopping...with my reusable bag, for sure :) have a good rest of the day!

Sounds like a wonderful Tuesday so far; and wow, that Earth Day fair sounds like it was quite enjoyable as well!! Savor that giant cookie later ;0)

okay the verdict is in and tofurky is WAY better than yve's (although yve's is in no way deficient). tofurky has a lot more flavor and a more substantial texture..thanks, i'm hooked!
