I had a nice breakfast with my friend Catherine today, the options were very limited, but I went with a simple egg white omelette with mushrooms and cheese, which came with some rye toast- I asked for it dry but of course they put a little butter on it. I had 1 out of the two pieces they gave me (two halves).
It was good, and filled me up until my lunch break at work- another quick lentil soup, with a plum and some veggie chips. These are sooo good! Totally addicting!
Work was ok, went by pretty fast- afterward I stopped by my grandparents house for a few minutes to give them a couple of my carrot cake cupcakes, which they appreciated! I also snacked on an apple to hold me over until dinner.
Now I'm back at home, packing the rest of my stuff to head back over to campus. Dinner will be just as simple tonight, but I'll definately be treating myself to one of the delicous baked goods I made over the weekend =)
The little extras I've been having have added up, because I'm up 1 more pound this week! It could be more, but I don't want to go overboard and I'm trying to keep it at a steady rise until I get to a healthy point- I'm getting there and thats what matters!

Congrats on the gain, your doing all the right things, and the extra little treats are definitly a bonus!
Glad to hear you're up a pound this week! I can't wait until I can try that carrot cake recipe too!
