Makes a difference

Yum!
My dinner tonight was simple, quick and oh-so delicious! I've found that with tofu of any sort, marinating it makes all the difference. Tonight I marinated one of my Helen's tofu steaks in 1 tbsp of Teriyaki Marinade for about 30 min. before heating some brown rice and broccoli, and tossing it all together for a Faux-Stirfry! It was perfectly satisfying and very tasty with the marinated tofu =)

This afternoon I snacked on a blueberry soy yogurt with 1/4 cup home made trail mix (mixed nuts, pumpkin seeds, dried cranberries, banana chips) which held me well through my organization!


I'm all ready to start studying for exams now (ewww) because I just spent 2 hours organizing all of my files today! I didn't even realize how mixed-up they were. They're all set now!

Sorry for the quick post; I'm off to yoga, but I'll be back later for dessert!

Oh yes, marinating DOES make a difference - it adds so much flavor to tofu!
