Simply special

My dinner might look quite simple; a "burger" and salad, but the amazing new ingrediants I recently bought added a little "something special" to every bite of my deliciously satisfying dinner!
My tastebuds loved the interesting changes in flavor, and I'm totally full! How's that for a great, quick meal?

I heated up a portabella mushroom Gardenburger on a Matthew's whole wheat english muffin, with a squirt of honey mustard and some of my new Follow Your Heart Monterey Jack. I really liked this; it tasted "cheesy" (not like real cheese, but definately cheese-like!) and the texture was fine heated up. I think it will be a good alternative on burgers and as a pizza topping.
I also made myself a big spinach side salad topped with some brocco slaw, cucumber, orange bell pepper, and Annie's Woodstock Dressing... which is AMAZING! My new favorite for sure! Such a great flavor, I love the mix of Tahini and Tomato- it's sweet and savory but not too much so. Definately made my simple salad incredibly enjoyable, and the healthy fats from the canola oil and tahini defnately helped with the fullness-factor. Mmm!





I didn't have a snack earlier today, we ate lunch a bit late and I had a major freak-out this afternoon when I ordered my plane tickets for Italy (non-refundable) and I realized I ordered them A DAY AHEAD from when the program starts. BIG UH OH. Leave it to me.
Soo, I'll just be in Calabria before everyone else, and grab a hotel room for my first night before moving into my dorm the day the program starts.
Luccily I have an amazing friend Carolyn who I'm going to Italy with, and she agreed to travel with me so we'll both be there early, and neither of us will be alone traveling to a foreign country!
Phew. I hope it's all solved for now.

I did manage to get some work and cleaning done after my almost panic attack, so I don't have as much to accomplish tonight, but I'm still going to try and get some more done before I have my dessert and settle in for the night- it's not late, but I woke up so early I'm already exhausted!

Your simple dinner looks wonderful; and I'm glad to hear that you DID end up liking the FYH Monterey Jack.

Uh-oh, sorry about the plane ticket mix-up - but it sounds like everything is under control, so kudos to you for planning! :0)
