Slightly off...

Today was a bit of an "off" day... it started off well, but work was super busy and I kept having problems with the register at work, so needless to say I was a bit stressed by the end of the night!

I headed straight to Starbucks after my Kinesiology class, and I was super hungry by the time I got there; so I quickly ate the lunch I had packed for myself; a simple tofurkey sandwich with 1 slice reduced fat provolone, some spinach and dijon mustard on a whole wheat pita. I tried the peppered tofurkey this time; and I really loved the peppery taste! Gave it a nice zing! I also had a crisp macintosh apple and some carrots on the side.

I studied for a while, and grabbed myself a grande nonfat cinnamon latte (not pictured, sorry) to sip on at work. I wasn't too hungry for my snack, but I nibbled on a few grapes I had packed along with my latte until it got really busy, and that held me alright for a couple hours.

For dinner, I microwaved myself one of my handy vegetarian chili bowls along with some sliced green pepper (about 1/2 a small pepper) and a piece of multigrain loaf (2 oz) that I accidentally burned in the work toaster oven (the pic is pre-burn incident), but ate anyways and it was still good!

The night only got crazier, and I didn't get back until late... so I was defiantely hugry for my snack! I finished off the baggie of grapes I had brought for an earlier snack, and also had a delicious Luna Tea Cake... I LOVE this kind, it tastes like a cookie! A great night time treat!


I am sooo exhausted at this point, and since I got a bunch of work done earlier I'm thinking I'm just going to pack up my lunch for tomorrow and call it a night. Another long day tomorrow... but I'm going to tea with two of my best friends tomorrow night, and I'm going home on Friday & Saturday so I'll have some relaxation time this weekend! I know I'm going to need it!

Hi Kristin! I swear once of the reasons I like Mexican is because its cheap and easy! :P Those chickpea tacos do rule, however. My husband takes it for lunch at least two days a week and is always asking if we can have them for dinner! lol.

I hope that means my picky sister (who happens to like mexican?) will like them, I'm making them for my family!
Of course with a recipe from you, I'm sure it will please!
