Going along with the evening's Indian theme, I decided to put my own twist on a traditional Indian treat- Sweet Mango Lassi! Usually a yogurt based smoothie, I decided to make mine vegan by using Silk Vanilla Soy Yogurt, and omitting the added sugar. I used rose water to make it really authentic, and added cinnamon to the top for the perfect touch of spice! (They also use cardamom, but I didn't have any on hand)
It was the perfect sweet dessert to end a really nice day!
Here's my recipe:
Vegan Sweet Mango Lassi
(Serves 1)
1 cup Vanilla soy yogurt
1 cup frozen mango pieces
1 tsp rosewater
cinnamon or cardamom sprinkled generously on top
Toss it all in a blender and blend until your desired consistency!
I made mine thick so I could eat it sorbet style out of a bowl, or you could blend it more and drink it with a straw!
Either way it's a great, healthy, refreshing treat!

I LOVE mangoes and I have ripe one right now. That might be on list for tomorrow!
