Tofurky goes to Mexico

I decided to try something new with my sammie today: I used 4 slices of peppered tofurkey stuffed in a whole wheat pita with spinach and guacamole! I had seen a couple other bloggers try this and was intrigued, so I brought back some home made guac from this weekend and slathered on a bunch with my regular tofurky. It was sooo good! I love avocados (healthy fats!), and although my guac was a bit brown (blame it on oxidation) it still tasted perfectly yummy, and made my pita all the better! On the side I had some carrots, and a few pieces of too-soft mango I attempted to cut up before realizing it was way too squishy. Oh, well. I'll try again next week- I love mango! After my mango incident I immediately switched to a small bowful of grapes for some extra fruit.

Mmmm... tofurky, spinach and avocado!


It's almost time for me to try and enroll for classes... wish me luck!

I'm in love, Mexican food is my favorite! Especially anything involving avocados.

Are these mini latte bowls from anthropologie? Theyre too cute!! Glad you liked guac, it really does add so much :)

oooh, YUM!!! Guacamole made such a wonderful addition to meals/sandwiches - hate the oxidation though, haha.

good luck enrolling for classes - it's always a stressful process for me, so I hope you have an easier time with it! :0)
