A crazy start

Whew! What a couple of days. This was definately a crazy first two days of the week. I'm actually not even home yet, I'm in the library at school, blogging quickly before I meet with my Writing group- then I get to head back home, eat a quick dinner and relax for the evening!

Yesterday was so busy I didn't have time to blog at all! My sister came over at night, and in the morning I did some yoga (40 minutes of MTV's power yoga) and then had a quick brekkie before heading to work for 9. I cooked up the last of the ezekiel cereal- 1/2 cup, along with 1/2 cup vanilla hemp milk, a banana and some raisins.

Since I didn't have as much cereal as I usually have, I had a Tall Cafe Misto from Starbucks for some extra protein (and it was quite tasty!) as a filler before work.
Food for the day was quick and simple as it usually is when I work. I packed some almonds for a snack (I ate the mid-morning), a can of Amy's split pea soup and some carrots.

This was nice and filling! I snacked on an apple on the way home, and had 1/2 cup 0% chobani with a dash of cinnamon as a snack when I got back to the house.

After getting some work done, I set out to make a new recipe for Nick and myself- I am LOVING these delicious, healthy recipes in Self's November issue! They're all online here- I would DEFINATELY check them out! Last night I made Shrimp Scampi with Pasta, Spinach, Cherry Tomatoes and Olives- YUM! I had a small serving of pasta with a whole bunch of shrimp- my favorite! It was delicious, and I also ended up having a couple glasses of white wine (I couldn't resist when it was already out from cooking) Which was good, but I do know that more than one glass of wine every once in a while is a lot of empty calories, so I like to try and control my intake as much as I love it.

This morning I woke up surprisingly alert and awake after the wine I drank (I have a fairly high tolerance). I went to the gym as planned, and did 40 minutes of cardio, as well as 25 minutes of arms- the usual routine, I'm going to be adding more weight soon because I'm looking for hypertrophy and my arms are getting used to the weights I'm using now, so I know I'm not building any more muscle! Before I left I had 1/2 a pb chocolate chip Clif bar, and for breakfast I had the usual cereal/yogurt/banana combo:

Lunch today was colorful! I made myself a huge spinach salad, along with some cottage cheese (1/2 cup) and carrots. The salad had tomato, onions, roasted red pepper, olives and 1/2 cup chickpeas, and I drizzled it all with balsamic vin. Simple and tasty, and packed with nurients! For a snack I tried one of my new Pure Protein bars. I LOVED THIS ONE!! It tasted just like a cinnamon bun to me, definately more of a dessert than a protein bar- I can guarantee these will be in my cart again soon!

After lab (which was not fun; I found out I didn't do well on my lab practical...) I snacked on an apple before meeting my writing group for a while.

Now it's 8:00 p.m. and I'm finally home, just finishing my dinner. This day went a LOT longer than planned and boy am I exhausted! As soon as I came home I threw the last serving of my home made Turkey Chili I made a couple weeks ago and froze, which I had with a small dollop of light sour cream and some micro steamed broccoli. This was the perfect quick meal after a long day- quick and hearty, I'm nice, cozy and full now.

BUT the night is not over yet (is it ever?!?!) I still have some anatomy to do before I can settle down- I hope I get some stuff done FAST because I have a new L Word DVD I am dying to lay on the couch and watch!!

The shrimp scampi looks delicious. Everytime I see a good recipe, I always get so intimidated with the ingredient list. It just seems so long! I'm a simple gal and hate having to buy ingredients that I may not use again for awhile. But I'll definitely be sure to check out the recipes.

This recipe was sooo simple, I'm sure you have staples like olive oil, chicken (or veggie) broth and white wine, as well as spices [if you don't, you need to stock up ;)!]- all you need is the fresh stuff and the recipe is 3/4 complete! Definately try some of them out- they're delicious, healthy and super user-friendly!
