Dinner in Maui

Mmm, mmm mm! I can't stop licking the spice off my lips from the fabulous Maui Black Bean Soup I ate for dinner!

I used the recipe from the Eat Clean Diet Cookbook, and it came out faaaabulous! I halved the recipe and got three huge bowfuls for dinner tonight and lunches later in the week!

I ate my portion (about 1 3/4 cups) with a huge lavash bread (I love these- they're by Joseph's brand, and the serving size is 1/2 a lavash, but one half is only 50 cals and 2 g fat, so I eat the whole big flat bread! Yum! I also sprinkled 1 tbsp grated parmesan cheese, which added the perfect contrast to the spicy soup!

I think I could eat this soup every day, it was filling, just spicy enough and I licked my bowl I loved it so much! I can't wait to eat another bowlful tomorrow at lunch!!

This afternoon I had about 3/4 cup 1% cottage cheese as a snacky while filling out some job applications for summer cooking positions! I'm itching to get in the kitchen!

Its all relaxing for me tonight, I got pretty much everything I wanted to get done today; the kitchen is sparkling, my room and all of its drawers are organized, my cupboards are as well, my job apps are filled out... well, you get the picture- it was busy day and I'm glad to do some more of my favorite past time (next to cooking of course)-reading!!

I just finished Women who Eat and it was fantastic, I'll definitely be reading it again! I'm just about to begin Beach Music by Pat Conroy, because I LOVED the Prince of Tides! Can't wait!

ALRIGH THATS IT. I'm purchasing that cookbook tomorrow n i'm SO excited! And I looove Joseph's lavash! It's incredible! Mmm so chewy, doughy, n soft!

Ive never tried their pitas tho!
