I just remembered I had these faux-chicken patties in the freezer, they're by Boca and sooo yummy... taste almost like real chicken! (Even my sister, the chicken lover was fooled!)
Only 170 kcal and 6 g fat, they're a lot better than regular chicken patties and they are FABULOUS with sauce and cheese.
So, I made a fake (healthier) "Chick'n parm" for lunch, using 1 boca meatless chicken patty (170 kcal, 6 g fat), 1/4 cup nature's promise organic tomato sauce (30 kcal), 1 slice melted reduced-fat provolone (50 kcal, 4 g fat). Along side this I had a serving of baby carrots (8 big ones= 85 g, 40 kcal) and 1/2 cup (100g, 70 kcal) of red grapes.
(I had already eaten most of the carrots... Sorry about the bad pic, it tasted MUCH better than it looked!)
Total lunch calories ~360 kcal, 10 g fat
(I'll have a snack later definately)
Yummy, filling and a good break to my filing!
Still haven't packed anything... but I have done some sorting!
I'm not going to coffee with my cousin in the afternoon today, so I have all afternoon to pack and run before I make dinner... I'm excited about tonight's dinner- Panko Parmesan Crusted Tilapia with sauteed brussels sprouts and brown rice. Mmm...
