I seriously just ate the most PERFECT breakfast.
Peanut butter walnut oats with banana are now my alltime favorite breakfast. Delicious, satisfying, filling for hours... should keep me going during all the work I have today- packing and such!
I had planned on doing yougurt & almonds, but figured if I have the stove- why not use it?
I heated the stove and stirred in:
1/2 cup old fashioned oats (from wholefoods bulk)
1/2 cup skim milk
1/2 cup water
1 tsp vanilla
a BUNCH of cinnamon
1/2 large banana
When this was cooking, I weighed out 10 g PB and 10g Walnuts.
I added these on top, along with the other 1/2 of my banana and some more cinnamon.
SO. GOOD.
Yes, its a lot of calories... but ALL from healthy stuff, it's the perfect way to start my day!
I'll definately have to make a modified version for school soon.
For now, I'm taking advantage of the kitchen and trying not to think about having to move back in the dorm. ugh.
I do miss my friends and classes though, so that will be good!
Breakfast:
Total breakfast calories: ~450 kcal, 17 g fat
