Healthy breakfast!

For breakfast this morning, I made myself an egg white omelet with 3/4 cup egg whites, and I topped them with about 1/2 cup cooked spinach, and 1/2 cup chopped bell pepper and mushrooms I sauteed in a bit of cooking spray. I dipped this in 1/2 tbsp of organic ketchup. Altogether the eggs were ~100 kcal, veggies ~75 kcal, and the ketchup 10 kcal.

On the side I heated up two Morningstar Vegetarian Sausage links (not pictured) for 80 kcal, 3 g fat and I had 1/2 cup red grapes (100 g, 70 kcal).



Total breakfast calories: ~335kcal, 4 g fat

I'm all full, and ready to pack!
I'm doing a bit of gift certificate shopping and grocery shopping in the afternoon with my mom and sister; and then I think I'm going with my friend Katrina to pick Danielle up from the airport!

I'll be sure to get some exercise in there somewhere, although I'm definately not running outside again today... it's all yucky and rainy. Treadmill again!
