So after my 35 minute run (with a 10 minute walk at the end) I decided to make myself a big tuna salad. I intended to have the salad over some baby spinach and tomatoes, but it was perfect in itself so I just left them seperate.
I think I have finally discovered the PERFECT combination for a yummy, healthy tuna salad.
In my tuna salad I added- 1/4 cup white beans (SO good with tuna and add extra fiber for only 50 kcal), 1 tbsp miracle whip light (20 kcal, 1.5 g fat), 1 tsp dijon mustard, 1 stalk celery chopped (10 kcal), some scallions (10 kcal) and some fresh parsley, with a squrit of fresh lemon. I mixed it all up and with the tuna it came to ~190 kcal; 3 g fat.
On the side I had a salad of baby spinach (20 kcal), some grape tomatoes (40 kcal), and 2 baby carrots chopped (10 kcal), drizzled with red wine vinegar.
I also had a few leftover strawberries... theres only a few good ones left! I sliced them and had 1/2 cup for about 50 kcal.

I'm SO full after the tuna, mixed greens and strawberries... I feel almost stuffed! Weird.
Thats alright; I planned on a big lunch to hold me over through shopping; (school supplies!) then I'll come home later and have a nice snack before we head off to the basketball game and my night with my dad.
Total lunch calories: ~310 kcal, 4 g fat.
