In many ways than one =)
First successes of the day; went shopping and had some AMAZING finds!
Spent over an hour in borders, found some fantastic new books I am SO excited to read:
- Yogi in the Kitchen… perfect for my resolutions to start doing yoga more often and cook more! It looks like it has some fabulous, healthy recipes! Very excited to try them!
- Julie & Julia- My year of cooking dangerously
o This looked so fun, seems like a great read for the food lover… I’ll have to give you my opinion on it!
- Eat, Drink and Be Healthy- this is the Harvard Medical School guide to Nutrition; I really like the concepts in it, so I’m glad to have the book in my possession for reference now =)
- Abundance- A novel of Marie Antoinette
o I love juicy historical fiction; this should be a good one!
After borders, we were STARVING so we headed to the Nordstrom CafĂ© where I made an amazing lunch choice… Nicoise salad with salmon!
It had organic baby greens, romaine lettuce, salmon with some herbs and Dijon mustard, roasted potatoes, red onion, kalamata olives, capers, tomatoes, hard boiled eggs and French green beans. It was also a bit doused in a Dijon balsamic vinaigrette… I sort of wish I had asked for it on the side, but the rest of the salad was healthy!
My Salad:
I ate all the greens, capers, tomatoes, olives, red onion and all but a bite of the salmon. I left a couple green beans, ½ the hardboiled egg and a couple potatoes, I ate the rest.
My mom had a very healthy, yummy looking panini… I would have tried a bite if it did not have chicken in it! =)
(and she only had one or two fries, healthy choices- go mom!)
It was delicious and kept me full for a while!
We didn’t have much time in the mall after lunch, but that was ok… I still got to go to a few places I wanted!
I ended up finding a nice v neck sweater from Nordstrom for only $20; great for layering with my button downs!
I got the pink spatula I’ve been eyeing at Williams Sonoma, and FINALLY got myself a cute little Salter Food Scale to use at school at Crate & Barrel. It’s cute, compact and will be very handy in determining proper portions!
American Eagle was byfar my best deals of the day… a green cable knit sweater, polka dot button down, undies and a cami for only $38… plus I had a giftcard!
Awesome!
Still need to get a few things from a couple of stores we didn’t get too, just means another shopping trip planned for next week =)
On the way out of the mall we stopped at the Nordtsrom E-Bar, and I got my fave grande nonfat vanilla latte!
I made dinner after a quick stop at the liquor store for some dry white wine.
Dinner was Jenna (eatliverun.com)’s recipe for Spicy Garlic Shrimp with Wheat Egg Noodles, but I used the linguine we had on hand instead. I did add a bit of parsley to the mix.
Unfortunately, I did have to make this recipe for four so I could not exactly meaure myself out a proper portion, but I estimated about a cup and a half- 3-3.5 ounces of whole wheat linguine, with 8 large shrimp (about 4 oz), and some of the white wine/olive oil/butter (scampi) sauce.
On the side I had a small side salad (2 salads in one day; can’t hurt! Hehe) made with mixed greens and tomatoes, and a tablespoon of dressing.
This was a hefty dinner; estimated at almost 650 calories.
The fat in it was mostly healthy though, from olive oil and only a bit saturated from the butter.
Still, it was incredibly delicious and filling! I definitely will only need a small snack later; probably some fruit because I haven’t had too much today yet. (Weird for me!)
Now I need to DO something… shopping wore me out, but I’ve just been sitting here so I think I’ll get up for a while, then maybe settle down later with one of my new books!
Tomorrow we’re doing grocery shopping for the party and I think I’m going to the movies with Tira =)
Oh, I also went for a short 32 minute run this morning. I hope it warms up so I can run OUTSIDE again before vacation is over.
Edit: Oops! I forgot to mention the two extra drink sips I had today: a sip of white wine with dinner, and a sip of mom's mexican hot chocolate... both fantastic of course!
