Fakin' it!

So I was cooking my delicious dinner when my roommate comes in the room and asks me if I want spicy peanut pasta with tofu and veggies. Ummm, YES! I LOVE peanut/veggies/wheat pasta/tofu... so I was very jealous... I wanted some, but I was already making my dinner, so I had her save me some for lunch tomorrow! Now I have a delicious lunch to have tomorrow after Kinesiology =)
I guess the modifications I'll make to tomorrow's plan will be to have my 1/2 mini bagel with 1 tsp pb/1tsp jam before my run, and then go for just the plain other 1/2 with my cottage cheese and fruit... because I know I'll be having more peanuts at lunch! Should be good =)

For dinner I faked a chicken parm again... I cooked up 1 vegetarian chick'n patty (Boca Brand) with 1/4 cup organic pasta sauce and 1 piece reduced fat provolone, along with about 1 cup cooked brocolli sprinkled with a bit of pepper for flavor, and 10 baby carrots. I'm nice and full and satisfied, but I NEED to get work done... theres so many people in the room eating its a bit hard!




Dinner calories: ~320 kcal, 11 g fat
