Nice to be home

Ahh, home at last after a tough week.
Next week will be just as hard, I'm sure... that's the life of a college girl I guess!
I look forward to the weekend for sure!

This afternoon I had an AMAZING review session for chem. It helped me more than I thought it would, which started me off for a great afternoon!
Afterwards I grabbed my stuff and my mom picked me up, I got my schedule for work next week... FINALLY some more hours! Not that I enjoy constantly working, but a little $$ wouldn't hurt! (I like my organic groceries, and it's almost time for spring shopping!)

Then we stopped by Shaws to pick up Quinoa for dinner (My mom couldn't find it!) we ended up getting a big bag of Bob's Red Mill Quinoa, and a few other "needed" groceries... I ended up finding clif bars on sale, so I grabbed a few, along with some low fat soy (also on sale!), and some veggie corn dogs I have been CRAVING... as well as some Kashi Waffles (another craving), and I found those cool "Flax Paks" everyone's been raving about, I'm going to try them tomorrow!
Oh, I also picked up the new issue of Bon Appetit =)
Definately a great trip!

Afterwards, I snacked on a banana in the car as we headed home and I started making my home made biscotti as soon as we arrived!
I started to make the dough, and then 1/2way through realized... I was doubling the recipe! Whoops! So, I added equivalent ingrediants and doubled the recipe... now theres enough to share with my family AND my roommates when I get back to the dorm Sunday eve! A few nights worth of sweet snacks!

As the dough was chilling in the fridge, I cooked up my NEW FAVORITE dinner! Sooo delicious, thank you thank you thank you Jenna for the amazing recipe!

Quinoa with Taleggio and Spicy Sauteed Mushrooms...absolutely fantastic in every way. A whole grain, my favorite veggie (or fungi, I guess!), and my favorite Italian cheese makes for an amazingly creamy, indulgent combination!
One bowl (1 cup cooked quinoa, 1 cup sauteed mushrooms, 1 oz taleggio cheese) filled me right up!



After dinner I laid out the dough on the cookie sheets and baked up the dark chocolate almond biscotti!
They came out perfect!
A bit small and thick, but not to worry. They taste good!
I was "good" in the sense that I didn't try any of the dough... but "bad" in the sense that I snacked on a whole lot of crumbs during the bake, cut, bake, flip, bake process!


Oh, well... a little chocolate won't hurt!
For a delectable dessert I had 2 of my perfect biscotti with 6 oz peppermint vitasoy.
Me and mom are savoring our delicious desserts while watching a new movie... Good Luck Chuck! It's supposed to be funny (but a little raunchy, I guess... hope it's not TOO bad!)
