Spicy (and a bit stuffed)

So I just got home from class a little while ago- she lectured right down to the very last minute this class!
I'm exhausted as usual, and I was STARVING when I got home... so I didn't waste any time cooking up a nice big can of Spicy Vegetarian Black Bean chili, that I ate alongside a spinach salad with some sliced baby carrots, drizzled in lemon juice and pepper, and 7 kashi crackers (1/2 serving). Yum! It was spicy and warm, perfect for this cold, windy day!
I must admit, I ate it a bit fast and feel a little stuffed... I guess it was all good stuff though so I shouldn't be too worried.



Dinner calories: ~465 kcal

This afternoon I stopped by the dining hall for lunch. Usually I'll just grab a salad or hit up the stirfry, but today I was excited they were serving my favorite dining-hall lunch... Shrimp over vegetable "fried" rice (it's not really fried, I asked) with grilled plantains. Yum! I had a scoopful of rice (about 3/4 a cup if I were to guesstimate) with 6 shrimp, 2 pieces grilled plaintains, and made sure to have some sauteed veggies (onion and bell pepper) in there as well. I wanted more veggies & fiber, so I added some broccolini to the top, mixed that in, and had an apple on the side!
The perfect lunch!



Kept me full for a few hours, then I snacked on my KIND Walnut & Date bar (150 kcal, 7 g fat) with a Tazo Awake tea, while I studied for chem in between classes.



Today we were discussing fiber, diabetes and alternative sweeteners in class. Very interesting. I'm trying to stay away from too much artificial sweetener (down to 1-2 pkts splenda a day!) so it was interesting to hear some of the research and such.
I'm still not for putting extra chemicals in my body it doesn't need! I think they're ok in moderation, a balance is key.

Alright, time to go study some MORE for chem...I better do well on this exam!!

crazy, we just finished talking about all of that in Nutrition class, too! Thanks again for all of your help :) I'll keep you posted on how it all goes. Glad you made it through the day, seemed like a long one!!!
