Tonight's dinner was awesome, scrumptious and colorful to boot!
While studying this afternoon I snacked on the leftover apple from my lunch. Cured my hunger pangs for a while, but I was definately ready for dinner after finishing my whole chem lab... TWICE because I realized I mis-calculated the final mass, and had to re-write everything! I need to pay more attention, apparently. Guess I was dreaming up my fabulous dinner too much.
When it did come time to eat, I decided to try one of my new Sunshine Burgers... to many, they might seem a bit of a no-no... they have 190 calories, 13 whopping grams of fat, and are GREEN... but to me, this was absolutely perfect! They are an amazingly tasty blend of sunflower seeds (healthy fats!!!), brown rice, veggies and spices. SO GOOD...definately a new favorite! Best veggie burger I've had, hands down. I had one on a whole wheat english muffin with 1 tsp honey mustard, a slice of reduced fat provolone, all melty and delicious! On the side I completed my rainbow by having a serving of baby carrots and a whole bunch of juicy red grapes! It was the perfect balance, and I'm totally satisfied. I love finding those great square meals that are quick, yummy and satiating! I'm sure this would make an awesome lunch as well. Heck, I'd probably eat it for breakfast!
Green goodness:
Calorie-wise, this was a pretty hefty meal, which is good... I'm definately trying to keep them up there. I will also most definately be back for a snack later... I'm making sure I have 2-3 good-sized snacks a day, and usually one is my treat... I think tonight it will be another one of my delish vegan cookies! Mmm!

oh my goodness I'm SO glad that you tried/like the Sunshine burgers!! they're yet another one of my... well, you know by now ;0)
it kills me when people turn away from Sunshine burgers because of their higher calorie and fat content - there's only about 7 ingredients in the entire burger; and the fat comes from raw sunflower seeds!! it's so wholesome - you can't go wrong!! :0)
I totally agree, I am learning to LOVE healthy fats... why snack on blah fattening saturated and trans fats when you can eat something as deliciously satisfying as a GREEN burger or lucious nut butter covered treat? Those are GOOD calories!
Bad fats=fat and gross. Good fats=delicious, slim, and healthy! Yum!
