Dinner tonight was sooo good! I wanted something quick and easy, but it had to be delicious, healthy and special of course! I was thinking pasta with some sort of veggies, and I have been craving bay scallops so I decided to pull it all together for a big creamy bowl of Whole Wheat Penne with Broccolli, Bay Scallops and baby peas! I used Kath's idea of a creamy lemon pepper sauce with the pasta/scallop combo (she made a similar dish with asparagus recently!) by using some asiago, nonfat milk and fresh lemon/grated black pepper heated into a rich (but still light) topping for my yummy healthy pasta bowl!
It was fantastic, and my mom and sister loved it as well! The whole meal only took about 20 minutes to make, and we finished it in just about the same time- we were hungry and it was TASTY!

This afternoon I went to the gym and went for a nice 30 minute run on the treadmill, and did 15 on the stationary bike. I was tired, but I felt pretty strong! (My healthy lunch did the trick!) Afterwards, I snacked on a big banana before grabbing dinner groceries.
Tonight I'm watching Across the Universe which I've heard great things about! Nice, relaxing friday at home =)
