For lunch today, I knew I wanted something healthy, filling and I wanted to use up the extra veggies I accumulated over the week, so I was going to go with a big salad, then I realized I'd be going running a short while after lunch so I knew I'd need something a bit more substantial to fuel my workout. Sooo... I decided to make a pocket out of it! I used a bunch of romaine lettuce, some cut up bell pepper, onion, cucumber and 1/2 cup edamame (I brought home leftover from my recipe this weekend!), stuffed it all in a wheat pita, drizzled some Annie's Gingerly dressing on it, and had myself a big salad in a pocket! I had this with a few leftover carrots and a big pear on the side! Filled me up perfect and should give me some great fuel for my run... I'm getting ready to go to the gym, grab a few groceries and make my family dinner before I get to bed early tonight... should be a busy, but fun weekend!
