Faux chick'n love

I chose my fave staple meal for my last "dorm room dinner" for over a week! Yes! (You can tell how sad I am to get away from the infamous microwave... bring on the stove, blender, toaster and slow cooker!)
I made my "Faux Chick'n Parm" with a Boca Organic meatless chick'n patty, 1/4 cup organic tomato sauce, a slice of reduced fat provolone and a bunch of cooked broccoli spears on the side. I know I've made this many a times in the past, but it's so quick, easy and never fails to make me go "mmmm!" It's hard not to resist such a convienant meal on exhausting days. Tonight was no different, it filled me right up for a healthy, simple meal and now I'm ready to finish my work and packkk... ahhhh! I did finish the box of patties though, so you'll be seeing a bit of a variety after break... =)

I'm sure I'll be back for a snack later, but have a great Thursday night... tomorrow's Friday! Yay!

mmm i must try that! it looks so real ;) i love italian food too. just wondering, are you a (octo-lavo) vegetarian?? also, do you ever drink alcohol at parties or anything? i really enjoy your blog, im also a college student trying to be healthy and its nice to see how you do it!

I'm actually a pescetarian; which means I don't eat any poultry, pork or red meat but do eat small amounts of egg, dairy and fish.

As for parties, I've got lots of great tips on how to stay healthy and have fun at parties... If you jot me your email address and I'll answer your party question!

It can be hard to stay healthy, but I feel so much better when I am... so I think of all the benefits, it helps me make the best choices =)

Oh my goodness...why didn't I ever think of that combination? I love those "chicken" patties, but never thought of making them into a quick n' easy chicken parmesan. Sounds delish! :D
