I guess I'm getting ready for St. Patty's day... (I am Irish after all!) because tonight my dinner was very green!
Quite delicious though, I don't understand why kids are so against green foods... they're such a fun color, and sooo yummy!
I cooked up my new favorite, a sunshine burger- topped with 1 tsp honey dijon and a slice of reduced-fat colby jack (added an amazing amount of extra flavor!) on a whole wheat english muffin.
On the side I had a big (green) salad of romaine, orange peppers and cucumber (about 1/4 of each) with 1 tbsp Annie's Gingerly Dressing.
LOTS of yummy flavors in this colorful, tasty meal- and a whole lot of nutrients (veggies, healthy fats, whole grains...) to boot!
Should keep me going through yoga for sure! =)
