Tonight my sister made me a delicous meal, cooked all by herself (with a bit of help from the Mamabear, of course) and let me tell you- I TOTALLY enjoyed it! I love to cook, and not making my own food tends to make me anxious... but she knows I'm a veggie, she knows I'm healthy and most of all... she knows what I like- so I trusted her =)
Well, Alicat's instincts didn't fail her tonight-I walked into the kitchen and saw this:
She made me a delectable Individual Pesto Pizza with some of my favorite ingrediants- a whole wheat pita topped with a special blend of broccolli, spinach, basil pesto and ricotta cheese topped with shredded mozarella... mmmm, pesto, veggies, whole grains and CHEESE... YUM! It was delicious, and she even made me a side salad (Mixed greens topped with red pepper, cucumber and annie's raspberry viniagrette) because she knows I love my extra veggies ;)
It was delish, and she even used low fat cheese to make it healthier. Gotta love the little sis! I definately enjoyed being cooked for tonight!
Of course, I had to repay the favor- and I really couldn't go a night without "cooking" so I decided to make my own version of a few recipes I've seen for raw cookies/brownies... I've wanted to experiment with raw treats, so I decided if I have all the ingrediants, why not make a little treat for dessert?
I concocted my own recipe for "Raw Nut fudge balls", (inspired by Romina, Ruby and a few others!) mixed up all the ingrediants and set them in the freezer while I went for a nice 30 minute walk on the treadmill, which, let me tell you felt realllly good to get some exercise in. Then we devoured them of course. We had 3 each- they were sooo good! Chewy and sweet, but not too sweet, easy to make, vegan, and RAW! How cool? My sister even suggested I "make some for easter!" She loved 'em so much. I love impressing her, shes so picky and I've definately opened her palate to some interesting, healthy tastes =)
Here's the recipe:
Raw Nut Fudge Balls
Ingrediants:
1 cup raisins
1/4 cup walnuts, chopped
1/2 cup almonds, chopped
1/4 cup organic cocoa or carob powder
1/2 tbsp water
1 tbsp agave nectar
Chop nuts, combine raisins, nuts, and powder in food processor/blender- chop for a few seconds to make the pieces smaller
Add 1/2 tbsp water and 1/2 tbsp agave nectar, mix until it combines and becomes a sticky mass
Add 1 more 1/2 tbsp agave nectar towards the end of mixing for sticking purposes
Remove from machine, roll into little balls
Place in tupperware or covered plate
Put in freezer for about an hour
Enjoy!
Mine made 10 little balls- my mom, sister and I each devoured three and left two more for my dad (girls get first pick in this house hehe)

The nut balls were sooo good- a quick easy dessert (or snack) that even veggiegirl could try! ;)
