An "alternative" lunch

I had a great yoga class today, the usual instructor was out so we had a guest instructor who lead a really great class! I loved the flow, she did most of my favorite asanas and the vinyasa was just the right speed. I felt energized, strengthened and stretched after I got back- just the way I love to feel after yoga!

The instructor did go a few minutes overtime, which I don't mind (the more yoga the better!) but I was STARVING by the time class was over. So, we headed over to the Co-op to grab their signature Tofu Wraps, that I ate on the way back to the dorm, with a big organic apple! I also had a bowl of snow peas when I got back to my room. A quick, filling lunch!



While at the co-op I also picked up a few items for the week; some Hickory Smoked tofurky, Almond butter (big $$!!) and some Follow Your Heart Vegan Monterey Jack, which I've been meaning to try. I do still have a few slices of provolone I want to use here in the dorm, because a little cheese doesn't bother me, but I like to switch it up between dairy and non-dairy, mostly non dairy is usually best for me!

Now that I'm back I have a whole bunch to do, but I have all afternoon to do what I need to do, so thats good!

Sounds like your Sunday is off to a great start so far!!

I've tried the FYH Monterey Jack, and I must say that it's not as good as the Cheddar or the Mozzarella - but see what you think about it. Just be sure to melt it, and not eat it cold! :0)

I know what you mean about almond butter being so expensive!! Whenever I buy it for myself, I savor every last spoonful...I am totally jealous of that tofu salad wrap!

I actually enjoyed the FYH monterey jack! I was going for something "different", because I already have the pretty simple provolone in my drawer... and I thought this tasted pretty cheesy, so I was satisfied!

I've wanted to get Almond butter for a while now... I bought it about a year ago, LOVED IT, and then started buying Whole Foods PB because I love that just as much, but this week I didn't get to Whole Foods... so I decided, why not splurge? It's healthy! =)
