Wow, this day has just gotten better and better!
Just a usual Thursday for me, except today the sun was shining, the weather was warm and I had my last day of lab, so although that took a bit of my time this afternoon I'm soo relived to be done!
I can't believe we're already nearing mid-April. This year has just flown by! I only have 2.5 more weeks left until finals... crazy!
I can't get too ahead of myself though, I still have a Chem Exam, Kinesiology and Nutrition Projects due, AND my chem lab finals coming up (not to mention my other finals at the beginning of May!) so I still have a while before I can really rest. But being done with something feels good!
I had my same-old same-old (but just as delicious) lunch of an Ezekiel wrap stuffed with 3 tbsp artichoke-kalamata hummus, 1/2 a bell pepper, spinach, brocco slaw and cucumber. So many veggies I could hardly eat it without spilling! I also had my usual sides; carrots and a pear. The fruit has DEFINATELY been getting better and better around here... a sure sign of spring!
After I got out of chem (a bit early) I had a quick larabar snack- I think Cinnamon Roll is my favorite flavor; it combines my favorite nuts with dates and cinnamon for a sweet treat that doubles as a great snack- it held me over the whole three hours of my lab!
I finished my lab, checked out my drawer, and had an amazing walk back to the dorm in the sunny warmth! Had a quick chat with my roommate next year, Tyler, about housing stuff (I'm bringing the Hello Kitty Toaster and a blender!!)... I'm so excited about my house, I mean- look how cute it is!
In a great mood but hungry, I went to my room and cooked up a nice dinner for myself- I used a Helen's Chicken-Style Tofu steak that I cooked and sliced into "strips" to dip into the agave-dijon sauce I made myself. On the side I had some spicy sauteed squash/zucchini leftovers, and I successfully cooked my first 1-person serving of couscous! I felt very good about my accomplishment, hehe... I just boiled up 1/2 cup water, added the 1/3 cup couscous (the box said it was 1 serving), added 1 tsp of promise light margarine, covered and let sit for 5... fluffed with a fork and voila! A fluffy, tasty side of couscous!
This meal was quick, balanced and very satisfying! I did go back for the rest of the veggies in the container I didn't fit on my plate though... nothing wrong with a few extra vegetables!
Even though I finished classes for the day, I still have plenty to do here at the dorm. Some homework, some packing, and, I'm a bit embarassed to admit... the BIGGEST pile of dishes I have had yet! It's toppling out of my basket, I definately need to get to washing that... I might take 2 trips because all at once is a little much. There are so many! I didn't mean for them to build up, I've just had sooo much going on! Ah, well... what needs to be done will get done!

I use Hodgson Mill Whole Wheat Couscous. It's the only kind I've found around here in "whole wheat" variety, and it's quite delicious! It was so easy to make one serving, and it came out perfect!

and hi - I just stumbled upon your blog and I love it! I'm a vegetarian/semi-vegan as well and all your food looks so delicious. I love veggie-filled wraps and hummus.... mmm. And lara bars! Yumm! I really need to try that and other flavors of them - they are such delicious snacks.
Just curious, do you keep calories/portion sizes in mind when you eat? I'm always wondering if I'm eating too much/too little or something.

Welcome! I'm glad you like my blog =)
I do not count calories, because I find it too restricting. I don't feel I need to because I make it my goal to eat fresh, wholesome foods that nourish my body, as well as pay attention to good portions of these foods, and especially my treats.
However, I am currently trying to gain a bit of weight- so you might notice some of my portions (such as of nuts, nut butters, etc) are a little bit larger than the recommendations. Again, I am doing this all with good health in mind, so I do try and keep as good a balance as possible.
I'll gladly help you figure out portions if you'd like me to; I'm a nutrition major so I'm very knowledgeable. I generally tell others, as well as use the tactic myself, to simply "eat when you're hungry, stop when you're full". By learning to recognize your hunger/fullness cues you should be able to learn how much food your body needs (because every body's different!) and not have a problem.
