Chocolate coconut paradise

I channeled the tropics tonight with my snack of kiwi, chocolate and coconut! I had a perfectly ripe kiwi along with a chocolate coconut thinkorganic bar to cure my sweet tooth and my growling stomach (it's always ready to eat, every three hours!) Delicious, and a pretty large snack. I didn't realize the bar was so much of a "bar", I thought it was more of a treat... I've filled up with lots of healthy fats today, nuts at my pre run snack, breakfast, afternoon AND night snack... thats a whole lot of nuts, but the extra antioxidant rich calories/fat are good for me, especially for gaining. (Plus, I really love nuts!)

So now I'm coming to the end to my nutty day... I still have dishes to do, and lunch to make, but my room's a little crowded and we have a hall meeting coming up... so I guess it will have to wait until after.
I had the perfect schedule for tonight, I hate when my plans are messed up! Oh, well... gives me some time to browse some food blogs while waiting for the meeting =)

hi kristin! i was just wondering if you could give me some TOFU advice, haha. i'm a vegetarian as well and i really, really want to try tofu and i heard it is best marinated, but i still don't know what i would do with it/how to cook it/how long to marinate it/etc. are there any tips you could give me (if you have time, sorry!)? i love trying new things and i think i would really like tofu, and i hear that it's best to buy extra firm for meals? thank you so much!!

I love tofu because of how versatile it is! At home when I have a stove, I buy extra firm tofu (as a personal preference) and press it (between paper towels and a big cookbook) for 1/2 an hour to make it more "spongy", then either sautee/"fry" it with healthy oils, or bake it. Sometimes I will marinate it beforehand, it's best to let it marinate overnight, then you get all the amazing flavor embedded in every tofu-licious bite! If you're time pressed though, any length of time with the tofu sitting in the liquids of the marinade will increase the intensity of the flavors.
When I'm at the dorm, I use tofu "steaks" which are frozen, then I cook them up and marinate them for as long as I have time for, usually 10-30 minutes, so the flavor soaks in a bit, then cook them with the rest of my meal to spread the delicious flavors!
I love my tofu any way, seasoned and baked, marinated and pan-fried, or sauteed in sesame oil, olive oil, or canola oil! The more seasonings you use, the more flavor you get! I think its best to experiment with different flavors, textures, and ways of cooking tofu (because there are sooo many!) and figure out what you like best. Hope that answers your question somewhat!
I'll try and be more descriptive with my techniques the next time I cook tofu so you get a better idea of how I prepare it.
