Earthy flavor

Another sunny day spent holed up at Rite Aid... not exactly the way I would have chosen to spend my Earth Day, but at least I got to enjoy some of it earlier in the day.
After my chem class, I went to Starbucks where I found a sunny spot and sipped on a grande iced soy latte while reading over some work. A little while later I had my snack- a golden delicious apple and a small baggie of raw mixed nuts.


This was just enough to hold me over through the beginning of work, until I had time to stop for my special veggie wrap and a few celery sticks for dinner. The wrap was flavorful and filling, stuffed with spinach, eggplant, brown rice, broccoli, pepper, and onion in an oil/balsamic vinegar sauce, all wrapped together in a tomato tortilla. Yum!


Of course by the time I got back to my dorm I was dying for a sweet treat- so I had 1/2 of my vegan Alternative Baking Company Snickerdoodle cookie and the rest of the mango I chopped last night.


OMG... this cookie is soooo good! I almost wanted to eat the entire thing it was so delicious! A little crispy on the outside, chewy and soft on the inside. Mmm... def. a new favorite! What a great ending to my nice earth day! To top it all off, my mom brought me a package that arrived in the mail- my "Baker's Sampler" order of Erin Baker's breakfast cookies! Now I have 12 different kinds to try, and with flavors like vegan chocolate chunk and peanut butter and jelly, I have no idea how I'm going to decide which one to try first!
I'm going to try these as a bigger nightly snacks to not only add a healthier twist on my desserts, but add nutrient filled bulk to my calorie intake to hopefully keep adding on a few pounds (I've been in a bit of a rut lately). Seems like a tasty way to do it, I'll let you know how it goes!

Hope everyone had an eco conscious day! It's time for bed for me!

Those cookies sound amazing! Where do you get the Alternative Baking cookies? From the way you rave about them, I'd love to try one!

Ahh, sorry that you had to spend a lot of your Tuesday/Earth Day at Rite Aid - hopefully today you'll have more free time!

I'm hooked on golden delicious apples right now :0) And wow, that wrap is stuffed with such great flavors!

ABC cookies are fabulous - I like how you paired it with the mango! yum!

I got mine at the Alternative Food Co-op near my dorm, so maybe your local health food store or whole foods?
If you can't find them around, order them (click!) offline! They're SO worth it!

that cookie company is the best company in the world! holy cookie! everytime I go to whole foods I have to buy one of those cookies. the pumpkin one is my fave but it was the snickerdoodle that started my obsession
