Game night turned out to be a blast! I had so much fun hanging out with my family, sharing some delicious food and treats, catching up and playing lots of fun games- we played "Dirty Minds", "Apples to Apples"... lots of laughs for sure!
On the way up I snacked on a big apple to hold me over, but I wasn't too hungry because of the spoonfuls of frosting I consumed while mixing! I def. ate wayyy too much, but it was my treat night tonight, I don't make frosting every day!
My appetizers were a big success- I made 3 toppings for crostini; A roasted artichoke topping from ED&BV, Garlicky White Bean Spread from Skinny Bitch, and a classic Tomato/Basil bruschetta. On top of delicious, crusty garlic rubbed baguette... Yum!
I tried one piece of each crostini for an appetizer.
I also snacked on a few carrots and a piece of crisp bread with a little port wine cheese:
For dinner we had pizza and greek salad; I had one piece of pizza and some greek salad (topped with feta and a bunch of kalamata olives- my fave!) drizzled with some raspberry viniagrette.
While playing games there were a lot of snack foods and candy going around... I was pretty good and just had a handful of popcorn and a small reeses candy.
For dessert we had the fabulous Coconut Cake from ED&BV I made! Ohmigosh, it was sooo moist and delicious! A new favorite, I'll definately be making this one again- everybody loved it!
I had a bit of trouble with melty frosting at first, I used a recipe for vegan buttercream frosting that was very sweet and creamy, but more "glaze-like" than frosting-like, so sticking was an issue but it firmed up after sitting for a bit and turned out perfect!
Topped with some extra coconut for garnish... mmmm! I love my vegan treats!

Now I HAVE to go get some sleep, we got home late and I have a race early tomorrow morning...as long as it doesn't downpour, that is!

Wow, talk about a fun, fabulous evening that you had!! Between your game-night activities, and LOTS of delicious food (your appetizers from ED&BV and Skinny Bitch look especially wonderful!), it's clear that your time with your family was well-spent :0)
I've made that coconut cake before too; and I used the recipe for the coconut dream frosting as well - I blogged about it a few months ago. That's the cake that made me like coconut again!! Haha.

Awww, I love those boisterously (sp? haha) fun nights with family. For me its always easier to enjoy a controlled amounts of treats when I am surrounded by friends/family and having a good time.
Great job on that cake, it looks really good!!
oh and btw thanks for your reply to my first comment I posted a couple entries back re: calorie counting. thats really cool. I'm learning to eyeball portions better (like 1 tbsp of peanut butter) and not rely so much on the plastic measuring spoon :P
