Lovin' the leftovers

Tonight I made my dinner as easy as it gets- I popped open the microwaveable rubbermaid containers of leftovers I had in my fridge, nuked 'em for a few minutes, and enjoyed!
My Caramelized Tofu and pecans with broccolli, cauliflower and brown rice was just as good re-heated as it was on Saturday! Mmm mmm, just the right sweetness, combined with crunchy sauteed veggies and chewy brown rice, it filled me up completely! I also had a side of the rest of the sauteed veggies in addition to my big container for some extra fiber and nutrients. Yum!


(In the big container there is 1 cup brown rice, about 3/4 cup of veggies, and a few oz of caramelized tofu with pecans. The smaller container held another cup of veggies)

I did my philosophy work, did my extra credit project... I guess that means I'll have to start chemistry now =(
Ah, well- the sooner I get it over with the better!
Just basic boring house keeping tasks on the to-do list tonight... dishes, laundry, homework... of course I'll have to take a dessert break somewhere in there!
