My Kinesiology professor left her lecture notes at home, so she dismissed us early, and I spent my free time doing some extra studying in the cafe before having my lunch.
For lunch, I had one of the best sammie's I have had in a long time! I used one of my delicious Matthew's whole wheat english muffins with 4 slices of tofurkey, 1 slice provolone, some honey mustard and cucumber. Simple but very flavorful and satisfying! I had my usual sides, big baby carrots and a pear. Perfectly rounded!
My nutrition classes were good as well, we heard about Dietetic Internships in my first class, I got my exam back in my second class (missed a few questions, got a 93-which is pretty good, I'm happy with it.) and then after going over the exam we had our short lecture on cultures, which I found to be quite interesting.
In between I snacked on a small baggie of trail mix- it was mostly pumpkin seeds and dried cranberries, with a few mixed nuts and banana chips. A great snack full of healthy fat and calories!
We got out 45 minutes early, so I wasn't even hungry when we finished- I went back to the dorm and checked my email for a bit before heating up my delicious dinner- leftovers from Saturday!
I had a serving of Red Lentil Dal with two mini wheat pitas to dip, as well as some Saag on the side.
I gave myself a too-big helping of Dal again, and I finished it all even though I am now STUFFED... darn. It was mighty tasty though!
Not too much work tonight, but I still need to get some stuff done I won't be able to tomorrow because I have work.
Even though I'll very full now, I'm sure I'll be back for dessert!

Y.U.M. I looooove Dal so much! I love all indian foods, but Dal is so comforting. OMG and ending a meal with Kulfi is but a dream...Pure Heaven! If you've never had it, you're missing out on one of life's most divine experiences. Congrats on your test! I hope you enjoy the rest of your evening Kristin! :)
