The verdict is...

Carrot Cake Cupcake!
Through all my chemistry studying, all I could think about was the delicious sweetness of a carrot cake cupcake topped with sugary vegan frosting... mmm... so I made my decision! For dessert, another vegan cupcake it was, topped with a generous amount of frosting and paired with a small bowlful of grapes for some extra fruit. This treat hit the spot for sure! I'm sure my roommates thought I was a little weird when I licked the plate, but it was SO worth it =)


I had it with a sweet n' spicy cup of caffeine free good earth tea... a nice, comforting snack!
I just realized how many carrots i've had today... in my soup, in my veggie chips, in my salad, in my burger, in my dessert... gosh, I hope I don't turn orange! hehe

I absolutely LOVE how the frosting is oozing all over that cupcake - talk about food porn, haha!! ;0)

Don't worry - I eat so many carrots, I should be orange already too, haha. I think you're safe!

Hey Kristin! I know you are trying to gain weight and you probably don't count calories but do you have a rough estimate of how many you take in in order to gain? If this is too personal don't worry about answering I'm just curious.

I'm not counting calories because I find that too restrictive, but I try and make sure to start the day with a big breakfast (over 500 kcals), and I have at least 2 snacks, both of which are estimated to be about 200-350 calories, which is more than I used to intake. I also add "extras" here and there to add calories, like a few more nuts, a dash more PB, etc. My goal is to make sure I make it over 2000 each day, because I'm so small my "regular" calories would normally be around 1600-1800, I'm guessing I'm taking in more around 2500 calories a day to gain. It all depends on the day though!
I've found it really is those "extras" and bigger snacks that have helped.
