I have definately been in the baking mood lately- when I got home from my amazing yoga class tonight, all I wanted to do was bake up another sweet treat!
This time, I used Happy Herbivore's recipe for the best Low-fat Chocolate Chip cookies you'll ever taste, this time making a double chocolate version, which were out of this world!
I made them big this time, and I still had two! It's a good thing they're pretty healthy!
My first one, right out of the oven:

She really has perfected moist chocolate chip cookies! These make me smile after every bite =)
I'm getting up fairly early tomorrow to eat breakfast, go for a run and then go to Newport (an island off the coast) with my Mom for the day. We're having lunch and then I'm heading to work right after, so my posts will be late but I'm sure my meals (at least lunch!) will be interesting!

Hi Kristin, Im trying to gain weight, like you, and was just wondering if you wouldnt mind sharing with me how many calories you are eating now, compared to before you really started trying to gain. Ive gone up by about 300 in the past 2 weeks, and havent noticed much of a difference, but Im going to give it some time. I am at a pretty low weight right now, and after a miserable shopping experience (nothing fits me anymore) I decided it was finally time to change my eating habits completely.

The reason you haven't seen a difference is because it takes 3500 calories for your body to gain a pound. This would mean adding an extra 500 calories a day, each day for 7 days to gain 1 lb. So if you're only adding 300 calories a day, it will take you much longer to gain the weight you need. If you are that underweight, you should definately add those extra couple hundred calories a day to see a difference, because sooner is better!
I was eating about 1600-1800 calories a day, so I pumped it up to between 2100 and 2300 calories to gain. Some days its more, some days it's less, but it has been consistently around there for the past 6 weeks or so.
I know it might be scary at first, adding extra food, but I found a pretty easy way to do it; I make my breakfasts extra big, because my breakfast is my biggest meal of the day, lunch and dinner are average, but I make sure I have a substantial snack in between lunch and dinner and a "dessert" after dinner. I making my "desserts" healthier and bigger after dinner (for instance, big breakfast cookies, granola bars, or 2 healthy cookies and some fruit) and this has helped me squeeze in those extra calories needed.
I have gained about 5 lbs in 8 weeks (starting off was slow) but it has leveled out to about 1 lb a week which is good, I'm still hoping for 7 more.
I totally understand your shopping experiences. I would get incredibly frustrated, and give up most of the time because I didn't fit into the clothes I wanted to wear. The other day, I tried on some clothes I had bought a year ago, thinking they would fit and were a bit too big, (it was the smallest size they had) and they fit! I was so excited, it's a great feeling. I hope you get to that point!

you ate the cookies with grapes, thats like going back to zero. totally legit. I'm going to perfect the double chocolate version this weekend!
annie, eat lots of nuts and avodados if you want to gain weight, you can also buy weight gainer supplements, they do make a vegan version I know vegan body builders use.
