Lunch in the sun

The race went well this morning, I made it in 21:08, which is one of my best times. It was sunny and warm, just as perfect as I thought it would be!
Afterwards I snacked on an orange to re-fuel, and after I got home and showered I was hungry so I decided to make myself lunch.
I made another tofurky sandwich, using the last 2 pieces of italian deli tofurky with 2 pieces of hickory smoked, a sliced of vegan mozzarella, some whole grain dijon and spinach on Rudi's honey sweet whole wheat bread. My favorite sandwich! On the side I had veggies and fruit as usual, some snow peas, rainbow tomatoes and a bowl of fresh green grapes and little cherries. I love fresh produce!

Since it was such a lovely day, I decided to take my lunch outside, so I sat and finished reading my book (it was absolutely incredible, I'll definately read it again!) while eating my delicious meal under the warm sun on the bench in my front yard. It was great, I'm so glad it's finally starting to feel like summer!

Of course, I only got go enjoy the beautiful day for a while... I have to work soon, but at least I'm making money! I have tomorrow off anyways, so I'll be able to relax and I think I'll be seeing some friends I haven't seen in a while in the evening- should be great to catch up!

Have a great Sunday!

Eat, Pray, Love by Elizabeth Gilbert, it's fantastic! All about her journey finding herself throughout Italy, India and Indonesia!
