Nonstop

I was the energizer bunny today- going, going, going!

I spent the morning at my parents house; I went for an amazing 30-minute run, despite the yucky clouds, it had yet to rain in the morning so I took the opportunity to go for a nice jog outside! After my run, I had a vanilla chobani for a snack, showered and said bye to the 'rents to do my errands!

I headed into downtown Wakefield, where I got my roomate a key made for the house (can you believe they only gave us one?!), and stopped at the Alternative Food Co-op for some groceries and lunch.
Afterwards, I did the rest of my shopping at stop & shop. I got everything pictured here, plus some apples, strawberries, blueberries, bananas, nectarines, red pepper, lettuce, sweet potatoes, and celery.

For lunch, I tried this cool yellow cucumber, sliced, along with 1/2 a tofu salad wrap from the Co-op, and an apple- but I saved this for a while after lunch because I was so full.

For an extra snack I had a couple of granola crackers from Italy!

I spent the afternoon baking, and I had to run back to stop & shop because I realized I forgot lemons!!
I also did some anatomy homework... three chapters in and I'm already confused!! I don't think that's a good sign...
After my cake was ready and cooling, I made myself and Tyler an Italian-inspired dinner- whole wheat spaghetti with sauteed peppers, and spinach in an olive oil/italian spices mix. We topped our servings with some feta cheese and presto! A delicious, easy, filling dinner.

After dinner, I spent some time frosting the Vegan Coconut Cakefrom ED&BV I made for Danielle's party tonight!! I'm so excited, she loved this cake on my birthday, so I hope she'll love it again! I topped it with TONS of extra coconut, of course!

I'm off to get ready for the party, you can assume I will have a HUGE piece of coconut cake, and I will be back blogging tomorrow!

I've made that cake before as well, with the Coconut Dream Frosting on top - loooved it!! I'm sure it'll be a hit at the party tonight :0) Enjoy!

Seriously are you finding this anatomy stuff difficult, Im in A&P 1 and studied for a good 4 hours tonight, and its still confusing! Have fun at your party tonight, that cake looks so good
