Fresh Picked

What a day! It was beautiful out, and I had a great time apple picking with my dad and sister! I got a full peck, 1/2 for baking and 1/2 for eating! I found a new favorite apple- Snappy Macs! I ate a whole big one while I was picking, as well as 4 tiny apples while I was browsing. (Probably equal to another big apple!). I got some Mccouns, Macintosh, Fugi, Granny Smith and Honey Crisp. I'm so excited to start using them in recipes!

When I got home from picking, I made myself a mexi-egg wrap for lunch, using 1 whole egg and 2 whites with a bit of mexican cheese, salsa and a dollop of light sour cream in a whole wheat wrap. I also had carrots on the side. This was yummy but didn't completely fill me up, so I went back for 1/2 cup of 0% vanilla chobani after. Then I was satisfied!!

I headed to work for 3, and snacked on a Pb chocolate Kashi bar while I was there. Dinner was quick and simple- I had an eggplant/rice dish from Ethnic Gourmet. When I got home I snacked on a red anjou pear sprinkled with cinnamon.

I have the day off tomorrow (as I'm sure most of you do!) so I have plans to go to the gym and then meet up with my Dad for lunch! Then of course I'll be baking with all my apples in the afternoon =)
I'll post when I can!
